I'd like to dedicate this book to the people across the world – refugees, babushkas, hunters, herders, soldiers, farmers, mothers, fathers and cooks – who opened up their hearts and thoughts to me, shared their food with me, told me jokes as well as tales of unbearable tragedy, and took me into their families and homes with generosity and good grace despite poverty, hunger, oppression and disenfranchisement.
It's also for my mum, Jean Gates, who helped me realize that food is a brilliant way to understand the world.
