In a separate shallow bowl, mix bread crumbs and Creole seasoning.

Dip shrimp in egg substitute, then in crumb mixture, patting to help coating adhere.

Bake in a greased pan until shrimp turn pink, 7-9 minutes. Keep warm.

Add crushed pineapple (with juice), and mix well. Do not drain your pineapple!

Mix in whipped topping. Stir in bananas, marshmallows, fruit cocktail, and mandarin oranges.

Cover, and refrigerate until thoroughly chilled.

Combine broccoli slaw, pineapple and green onions. In a small bowl, whisk together mayonnaise and reserved pineapple liquid until smooth. Add to broccoli mixture; toss to coat.

To serve, spread hoagie buns with tartar sauce. Divide tomato slices and shrimp among buns. Top with pineapple broccoli slaw.

  Readers Guide

Summer Island is full of passionate residents. Do you live in a community with people who like to debate over issues?

Why do you think Trace didn’t lean on Kat, Jewels, Wind, and Bri about what had happened in Brazil?

How do you think you’d feel after the death of an intern that you were responsible for?

Dustin stated he’d moved to Summer Island after being coaxed into it by Trevor, but his friend says he did it to be near Trace. Why do you think Dustin made the move?

Have you ever been manipulated by someone like Rhonda manipulated Dustin about tearing down the shack? How did that make you feel? How did you handle the situation?

What do you think helped Dustin realize he wasn't too self-absorbed to deserve Trace?

Have you ever known a person willing to face his worst fears to help you the way Dustin jumped into the ocean to save Trace when he thought she was drowning?

Did you have sympathy for Rhonda after learning why she was upset that Trace’s father didn’t leave his home to her? Do you think things would’ve been different between her and the Summer Island Sisters if Rhonda had grown up without abandonment issues?

Would you have been Team Dustin or Team Trace?

If you were able to visit Summer Island for a day what would you like to do? Go out sailing on Trevor’s boat? Go shopping with Wind? Perhaps hang out on Friendship Beach for cocktails and talking about books.
