  Breakfast Hot Dish

  1 lb. ground pork sausage

  6 slices white or light wheat bread

  1 8-oz. pkg. mild cheddar cheese, shredded

  8 large eggs

  2 c. milk (2% or whole)

  ¼ tsp. salt

  ½ tsp. pepper

  In a large skillet, cook the sausage over medium heat, stirring frequently, until browned and crumbly (about 10 minutes). Drain fat.

  Cut and discard the crusts from the bread. Then, cut the slices in half and arrange them in a single layer in a 9-x-13-inch casserole dish that’s been sprayed with cooking oil spray. (Cut the bread pieces to get them to cover the entire bottom of the pan in a single layer.) Sprinkle the bread layer with the meat, then the cheese.

  In a large bowl, whisk together the eggs, milk, and seasoning. Pour over the cheese. Bake the casserole at 350 degrees, in a preheated oven, for 40 minutes. Let the dish sit for 10 minutes before serving. (Add ¼ c. diced onions and ¼ c. diced green peppers for some extra zing!)
