  It was such fun to return to Seashell Cove to tell Meg’s story and revisit some familiar characters. I have to say, a lot of the joy came from dreaming up cake recipes, as I love both baking and eating cakes. My grandmother taught me to bake, as Meg’s does, and my gran’s date slices were a favourite of mine. My mum’s a fantastic baker too, and some of my loveliest memories are of coming home from school to her home-made fruit cake, chocolate cake, teacakes and chocolate eclairs. It’s amazing I was so skinny back then, but they were just a teatime treat!

  I’ve included a recipe, in case you fancy trying Meg’s Chocolate and Raspberry Cake, and if you do I’d love to see a photo of it.

  Meg’s Chocolate and Raspberry Cake

  Ingredients

  200g self-raising flour

  25g cocoa

  1 teaspoon baking powder

  225g butter, at room temperature, plus a little extra for greasing

  225g caster sugar

  4 eggs

  Filling

  300ml double cream

  200g white chocolate (optional)

  1 teasp
oon vanilla extract

  300g fresh raspberries

  Method

  Preheat the oven to 160°C/Gas Mark 3.

  Sift the flour, cocoa and baking powder into a bowl. Cream the butter and sugar together in a mixing bowl with an electric mixer until pale and fluffy.

  Beat in 1 egg, then a spoonful of the flour mix. Continue adding eggs and flour alternately until it has all been added and the mixture is smooth.

  Spoon into 2 lightly buttered 23 cm (9 inch) cake tins lined with a circle of non-stick baking paper. Smooth the tops so they’re level then bake for 15–20 minutes, or until the tops feel firm and a skewer comes out cleanly.

  Leave to cool in the tin for 10 minutes then loosen the edges and transfer to a wire rack to cool completely.

  Whip the cream and vanilla extract and spoon half over one of the cake layers, then sprinkle with half the raspberries. Add the other cake half, top with the remaining fresh cream and raspberries, then sprinkle over icing sugar to finish.

  (OPTIONAL: Melt most of the white chocolate in a bowl set over a saucepan of simmering water, then fold into the whipped cream before filling and topping the cake, and shave the leftover chocolate on top).

  Cut into slices to serve.
