  Recipes Made and Served at The Bean Hive

  Salted Caramel Coffee

  Ingredients:

  8 tablespoons ground coffee

  4 tablespoons caramel syrup

  4 tablespoons half & half

  Dash sea salt

  Instructions:

  Size: 1 pot of 12 cups of coffee

  Brew: Classic

  Following the measurements provided, place the ground coffee into the brew basket.

  Place caramel syrup, half & half, and salt into a mug; set mug in place to brew.

  When brew is complete, stir to combine.

  Halloween Pumpkin Oatmeal Spice Dog Treat Recipe

  Makes 20 cookies

  Ingredients:

  1/2 cup canned pumpkin

  1/2 cup water

  2 tablespoons olive oil

  1/2 teaspoon cinnamon

  1/2 cup oatmeal

  2 1/2 cups whole wheat flour

  Instructions:

  Preheat oven to 375 degrees.

  Combine pumpkin, oil, water, and cinnamon in a large bowl and stir well.

  Gradually mix in oatmeal and flour to form stiff dough.

  Roll dough to 1/4″ thick and cut with cookie cutters on floured surface.

  Bake on non-stick cookie sheet for 30-40 minutes.

  Bean and Ham Soup

  Ingredients:

  1 pound dry great Northern beans

  8 cups water

  1/2 teaspoon salt

  1 ham hock

  1 cup chopped carrots

  1/2 stalk celery

  chopped1 cup chopped onion

  1 teaspoon minced garlic

  1 teaspoon mustard powder

  2 cups chopped ham

  1/2 teaspoon ground white pepper

  Directions:

  Rinse the beans, sorting out any broken or discolored ones.In a large pot over high heat, bring the water to a boil. Add the salt and the beans and remove from heat. Let beans sit in the hot water for at least 60 minutes.

  After the 60 minutes of soaking, return the pot to high heat and place the ham bone, carrots, celery, onion, garlic, and mustard, in the pot. Stir well, bring to a boil, reduce heat to low and simmer for 60 more minutes.

  Remove ham bone and discard. Stir in the chopped ham and simmer for 30 more minutes. Season with ground white pepper to taste.

  Lunch Lady Brownies

  Ingredients

  1 cup butter melted

  1/2 cup cocoa

  1 cup light brown sugar

  1 cup white sugar

  4 eggs

  1 tablespoons vanilla extract

  2 cups all-purpose flour *

  * Gluten Free Alternative:

  1 1/3 cup brown rice flour

  1/2 cup tapioca starch

  1/3 cup potato starch

  Frosting Ingredients:

  1/4 cup butter softened

  3 cups powdered sugar

  1/4 cup cocoa

  1/4 teaspoon kosher salt

  1/4 cup milk

  Directions:

  Preheat the oven to 350°F. Grease a 9x13 baking pan or line with parchment paper. In a large mixing bowl, whisk together the butter, cocoa, brown sugar, and white sugar. Add the eggs and the vanilla. Whisk again until smooth. Add the flour and stir until combined. Pour into the prepared pan and use a spatula to spread the thick batter to the corners. Bake for 22-24 minutes, until a toothpick comes out with moist crumbs.

  While the brownies are baking, make the frosting. In a mixing bowl, combine the butter, the powdered sugar, the cocoa, and the salt. Beat with an electric mixer for 1-2 minutes, until combined. It will be mostly dry crumbs. Add the milk and beat again for 1-2 minutes, until smooth and creamy.

  Remove the brownies from the oven and let cool for just a few minutes. Gently spread the frosting over the brownies while they are still quite warm. Let cool before slicing. Enjoy!

  Note:Frost the brownies while they are still warm. The frosting will melt down a bit into the brownies creating an irresistible crust.

  Apple Pie Jam

  Makes 6 half pints

  Ingredients:

  About 8-10 mixed firm crisp apples

  2 tbsp lemon juice

  1 tsp ground cinnamon (I use Ceylon cinnamon in this recipe)

  1 tsp ground ginger

  1/8 tsp ground nutmeg

  1 box pectin

  4 c white sugar

  1 c firmly packed dark brown sugar

  1/2 tsp butter

  Peel and finely dice the apples. Pack them firmly into a 4 cup measuring cup.

  Add water in between all the apple pieces to fill to 4 cups.

  Put the apples, water, lemon juice, and spices in the preserving pan and sprinkle the pectin over the fruit. Stir well.

  Bring the mixture to a full rolling boil that cannot be stirred down.

  Add both sugars, stir well, and bring back up to a full rolling boil for EXACTLY one minute. Do not stop stirring.

  Remove from heat. Stir in the pinch of butter to reduce the foam. Skim off any foam that remains.

  Ladle into hot, clean jars leaving 1/4″ headspace.

  Wipe the jar rims and threads.

  Cover with lid and ring.

  Process in boiling water for 10 minutes.
