1 can (20-oz.) crushed pineapple, undrained
2 small pkgs. raspberry gelatin
1 can (16-oz.) whole berry cranberry sauce
1 Granny Smith apple, chopped
⅔ cup chopped walnuts, optional
Drain pineapple into 4-cup measuring cup, reserving juice. Add enough cold water to juice to measure 3 cups. Pour into saucepan and bring to boil. Remove from heat and add dry Jell-O. Stir 2 minutes or until dissolved. Stir in cranberry sauce. Pour into large bowl. Refrigerate 90 minutes or until slightly thickened.
Stir in pineapple, chopped apple, and walnuts.
Refrigerate 4 hours or until firm.
Note: After you stir in the pineapple, apple, and walnuts, you can put it in a 9-x-13 pan until firm. Then cut in squares to serve on fancy salad plates. Top with a dollop of whipped cream.
Makes 14 servings, ½ cup each
Christmas Sugar Cookies

2 cups all-purpose flour
2 tsp. baking powder (double recipe ~ 1 tbs. plus 1 tsp.)
½ tsp. salt (if you use a coarse salt it will need to be ground before measuring)
2 large eggs
1 cup sugar
¾ cup vegetable oil
2 tsp. vanilla extract
Red sugar sprinkles for topping
Hershey’s Holiday Kisses Candy Cane Mint Candies
Stir flour, baking powder, and salt into a medium bowl and mix well.
Whisk eggs in a large bowl until blended. Add sugar, oil, and extract. Mix well.
Stir the dry ingredients into the egg mixture until blended.
Chill, covered, for at least 30 minutes. (I’ve left in the refrigerator overnight).
Preheat the oven to 400 degrees.
Prepare a small bowl of sugar and a small bowl of water.
Drop the cookie dough by rounded teaspoonfuls onto ungreased cookie sheets.
Dip a flat-bottomed glass into the water, then into the sugar, and use the sugared glass to flatten each cookie; I’m usually able to flatten two cookies for each dip; then this step will need to be repeated.
Sprinkle the colored sugar onto the cookies to your taste.
Bake until lightly browned, about 6 to 8 minutes.
When cookies come out of the oven, press an unwrapped Candy Cane Mint in the middle of each cookie; hint ~ it helps to have the candies unwrapped beforehand; tip ~ due to the white chocolate, these won’t harden completely like milk or dark chocolate.
Cool the cookies on baking sheets for about a minute, then move them to wire racks.
Alternate: You might try adding ½ tsp. mint extract to the cookie dough.
Yields about 2 dozen
