1 cup cold water
2 teaspoons rum extract
1 (3.5-ounce) (100g) dark (72% cacao) chocolate bar, chopped
1 cup of whipped cream for topping
Dash of vanilla extract
Mix pudding with whipping cream and cold water until thick. Fold in rum extract, then put in a fancy serving bowl and let sit in refrigerator until set. Finely chop up the chocolate bar and sprinkle over top of pudding. When ready to serve, garnish with whipped cream flavored with vanilla. Serves: 4

KIZZY’S CHOCOLATE RUM HEAVEN, VERSION 2
For less calories, substitute ¼ cup cocoa powder for chocolate bar (reserve 4 teaspoons for garnish), and 1 cup chilled evaporated skim milk for whipping cream.

ANGELA’S LEMON PARFAITS

1 (3-ounce) package sugar-free, lemon-flavored gelatin
1¼ cups water, boiled
3 tablespoons lemon juice
1 teaspoon grated lemon peel
2 cups vanilla ice milk or carb-free ice cream (Angela uses Dreyer’s
Grand Light)
Dash nutmeg
Nonstick cooking spray, butter flavored
cup slivered almonds
Dissolve gelatin according to package directions but using only 1¼ cups boiling water instead of two full cups. Stir in lemon juice and peel. Add ice milk by spoonfuls until melted and smooth. Add dash of nutmeg, then pour into individual parfait glasses and chill. Spray almonds with butter-flavored nonstick cooking spray and toast till light brown in skillet, stirring often to prevent burning. Set aside. When ready to serve parfaits, top them with slivered almonds. Serves: 4
