  This is a holiday punch, served at Christmas in Denmark. My recipe comes to me via New Orleans and Phyllis Jordan’s PJ’s Coffee & Tea Co., Inc. This is sweet, creamy, delicious.

  SERVES: 6

  BEAT eggs and lemon peel until mixture is light and fluffy. Add sugar a little at a time, beating continuously. Continue beating until thick. Slowly stir in the coffee and then add brandy or cognac.

  SERVE IN CHILLED GLASSES.

  The flavors of brandy and coffee here are subtly blended with the richness of cream. This coffee is delicious with or without brandy.

  SERVES: 2

  IN blender cup, place sugar, ice cubes, and coffee. Blend for twenty seconds on medium. Remove cap and add half and half and brandy. Blend for five seconds. Pour iced coffee into two, tall glasses. Top with sweetened whipped cream.

  You don’t often think of serving coffee with wine. Tawny port has the body and flavor to make a nice marriage with French roast coffee. We think you’ll appreciate this as a great dinner coffee.

  SERVES: 2

  COMBINE ingredients and mix in a blender cup at high speed. Pour into chilled wine glasses.

  This is a dramatic, yet simple and fun idea-recipe.

  SERVES: 2

  SOAK a cube of sugar in brandy for ten minutes. Place into a teaspoon and hold so that it will rest on top of the cup of coffee. Ignite. Hold until flame burns out and drop contents into the coffee.

  here’s a great hot coffee with a tropical twist. It’s also great when poured over crushed ice.

  SERVES: 2

  PLACE Kahlua and rum into two, heat-proof coffee mugs. Add coffee. Stir. Top with whipped cream and nutmeg.

  1 quart plus 1 cup very cold water

  6 tablespoons French Market Coffee (coffee with chicory)

  8 sugar cubes

  8 cinnamon pieces, 1 inch each

  8 ounces brandy or cognac

  here’s a recipe from a good friend in Dallas, Texas, Ron Weunsch. Ron is an avid hunter who likes a warm campfire, close friends, and a Campfire Cafe on a brisk fall evening.

  SERVES: 6

  PEEL orange into one, long peel. Do the same with lemon. Stud each long peel with cloves (eight each). Over campfire, heat water in a large, open pan. When water is boiling, add coffee and allow to boil for five minutes. When time is up, add one more cup cold water to settle out grounds.

  IN second pan, heat studded orange and lemon peels, sugar cubes, and cinnamon pieces until sugar melts. Add strained, hot coffee to mixture. Slightly warm cognac or brandy.

  IGNITE. Holding orange and lemon peels with heatproof tongs, slowly pour burning brandy down peels into hot coffee. Strain again and serve in large mugs.

  This is a refreshing beverage to serve with salads or desserts. It is frothy, with just a tang from citrus and Cointreau.

  PLACE all ingredients except orange slices into a blender cup and blend at a high speed until frothy. Divide between two, sixteen-ounce glasses. Garnish with orange slices.

  here’s an interesting way to clarify your coffee.

  PLACE a clean dime in the bottom of both coffee cups. Cover with coffee until it is no longer visible. Now, pour liqueur into the cup until the coin appears again. (Don’t drink the dime!)

  BLEND together coffee, Kahlua, and creme de cacao. Pour into four, heat-proof parfait glasses, eight ounces each. Top each with one-fourth cup whipped cream. Dot with chocolate syrup dots to resemble chocolate chips.

  IN a chilled bowl, beat whipping cream with sugar and vanilla until firm. In six Irish whiskey glasses (or eight-ounce, heat-proof wine glasses), pour one ounce Irish whisky, a tablespoon of brown sugar and coffee. Stir. Gently place whipped cream on coffee. Serve immediately.

  1, 2-inch vanilla bean

  1 cup cold water

  1 cup dark roast coffee

  1 cup vodka

  ¾ cup brown sugar

  ¼ cup white sugar

  2 tablespoons dark molasses (optional)

  here’s a delicious, homemade version of Kahlua. Although not as heavy as the commercial variety, our coffee liqueur is light and flavorful. For a heavier coffee liqueur, add dark molasses.

  SERVES: 16, 1-OUNCE SERVINGS

  PLACE vanilla bean in coffee carafe. Brew coffee according to manufacturers’ directions. (If coffee grounds will not fit in your filter basket, brew twice using half the coff
ee each time.) Allow coffee to cool. Brew through the grounds a second time.1* Immediately add vodka, sugars and optional molasses. Pour into a clean, quart bottle with a tight-fitting stopper. Allow to cure for two days, then serve as Kahlua.
