Mr. Boone’s Famous Honey Pie Recipe
INGREDIENTS
1 store-bought piecrust
(Mr. Boone makes his own, but he would need to show you exactly how to blend the dough just right with your fingertips, so he said it’s fine to use a purchased crust.)
½ cup butter, melted
¼ cup sugar
¼ teaspoon salt
2 tablespoons white cornmeal
¾ cup honey
1 teaspoon vanilla
2 teaspoons white vinegar
3 eggs, lightly beaten
1 cup cream
a sprinkle of coarse salt
DIRECTIONS
Preheat oven to 350 degrees.
With an electric mixer or by hand, combine melted butter, sugar, salt, and cornmeal to make a thick paste. Add honey, vanilla, and vinegar and mix together. Fold in eggs. Add cream and blend. Pour the filling into the piecrust and bake for 45 to 55 minutes, until the filling puffs up and the center is slightly wobbly. Then sprinkle with coarse salt. Let the pie set for a while. Serve either warm or at room temperature.
