8 – or 9-inch pie crust (premade is fine, or make your own if you’re so inclined)
Topping
1 cup all-purpose unbleached flour
1⁄2 cup brown sugar
1⁄2 cup butter, room temperature
Directions
Peel and core the apples, then cut them into thin slices, mixing them all together well in the bowl afterward to get a good blend of your varieties. In a medium bowl, sift together the sugar, flour, nutmeg, cinnamon, and salt, then stir into the apples until they are thoroughly coated. Add the coated apple slices to the pie shell and set it aside.
In another medium-sized bowl, combine the flour and brown sugar, and then cut in the chilled butter. The mix should be crumbly, and the butter will be in small pieces around the size of a BB. Add the topping to the pie, and then bake it uncovered in a 425-degree-F oven for 30 to 45 minutes until the crust is golden brown and delicious. Check the top frequently for scorching, and when it gets to be a dark brown, cover it loosely with foil and continue to bake until a butter knife slips into the top easily. Cool at least 10 minutes if you can wait, and then add a scoop of ice cream before serving if you are so inclined.
Serves 4 to 8 (4 if you’re being generous, 8 if you’re feeling stingy) depending on your slices and the level of your hunger!
