Easy Pork Stir Fry
Preparation time: 10 minutes
Cooking time: 15 minutes
Servings: 4
Ingredients:
9 ounces bacon, chopped
9 ounces snow peas
2 tablespoons olive oil
1 pound pork loin, cut into thin strips
2 cups mushrooms, sliced
¾ cup white wine
½ cup yellow onion, chopped
3 tablespoons clean sour cream
A pinch of salt
White pepper to the taste
Directions:
Put snow peas in a pot, add water to cover, also add a pinch of salt, bring to a boil over medium heat, cook until they are tender, drain, put in a bowl and leave aside.
Heat up a pan over medium high heat, add bacon, cook until it’s crispy, drain grease, transfer to a bowl and also leave aside.
Heat up a pan with 1 tablespoon oil over medium heat, add pork strips, a pinch of salt and pepper to the taste, cook until they are tender and transfer them to a plate.
Return pan to medium heat, add the rest of the oil, heat up over medium heat, add onions and mushrooms, stir and cook for 4 minutes.
Add wine, stir and simmer until it’s reduced.
Add sour cream, peas, pork, stir, heat up for 1 minute, divide on plates, top with crispy bacon and serve.

Beef and Veggies Stew
Preparation time: 10 minutes

Ingredients:
1 pound ground beef steak, cubed
A pinch of salt
Black pepper to the taste
¼ teaspoon sweet paprika
1 tablespoon canola oil
1 and ½ cups water
1 tablespoon whole wheat flour
1 yellow onion, chopped
½ cup tomato sauce
1 bay leaf
½ teaspoon caraway seeds
2 turnips, cut into small cubes
2 potatoes, cubed
2 carrots, sliced
Directions:
Heat up a pot with the oil over medium high heat, add beef, salt, pepper and paprika, stir and cook for 2 minutes.
Add flour, stir well and cook until meat is brown.
Add water, tomato sauce, onion, bay leaf and caraway seeds, stir, bring to a boil, cover and simmer for 1 hour.
Add carrots, potatoes and turnips, cover again and cook for 45 minutes more.
Take stew off heat, discard bay leaf, divide into bowls and serve.

Beef and Green Sauce
Preparation time: 10 minutes

Ingredients:
2 pounds round roast
2 carrots, chopped
1 leek, chopped
1 bay leaf
1 turnip, chopped
1 celery stalk, chopped
1 teaspoon black peppercorns
2 yellow onions, cut in quarters
8 ounces mixed chives, parsley, cress and chervil, chopped
2 cups clean yogurt
3 tablespoons clean mayonnaise
1 cup clean sour cream
1 teaspoon mustard
A pinch of salt
Black pepper to the taste
Directions:
Put beef in a pot, add bay leaf, peppercorns, leek, carrots, celery, turnip, onions and some water, bring to a boil over medium heat and cook for 1-hour stirring often.
2 In a bowl, mix yogurt with sour cream, mayo, mustard, salt, pepper and chopped herbs and whisk well.
Add this to the pot and stir.
Take off heat, leave aside for 10 minutes before slicing the roast and serving it with veggies and sauce on top.

Roasted Pork Shoulder

Ingredients:
3 tablespoons garlic cloves, chopped

4 pounds pork shoulder

Directions:
In a bowl, mix olive oil with salt and pepper and whisk
Brush pork shoulder with this mix, arrange in a baking pan and put in the oven at 425 degrees for 20 minutes.
Reduce heat to 325 degrees F and bake for 4 hours.
Take pork shoulder out of the oven, leave it to cool down for 10 minutes, then cut and arrange on a platter
Serve with your favorite side dish and salad.

Crusted Veal Chops
Preparation time: 10 minutes

Ingredients:
3 tablespoons whole wheat flour
A pinch of salt
Black pepper to the taste
2 eggs
1 tablespoon milk
1 and ½ cups panko
Zest from 1 lemon, grated
4 veal rib chops
3 tablespoons extra virgin olive oil
Favorite green salad for serving
Directions:
Put whole wheat flour in a bowl.
In another bowl, mix eggs with milk and whisk
In a third bowl, mix panko with lemon zest and stir.
Season veal chops with salt and pepper and dredge them in flour.
Then dip in the egg mix and coat in panko.
Heat up a large pan with the olive oil over medium high heat, add veal chops, cook for 2 minutes on each side and transfer to a baking sheet,
Put them in the oven at 350 degrees F and bake for 15 minutes.
Take veal chops out of the oven, divide between plates and serve with your favorite green salad on the side.

Crusted Beef Delight

6 pounds sirloin roast
½ cup prepared horseradish

In a bowl, mix horseradish with salt, mustard, pepper, parsley, sugar and vinegar and whisk well.
Rub meat with this mix, place in a roasting pan, put in the oven at 375 degrees F and bake for 2 hours.

Delicious Pork Roast

5 and ½ pounds pork loin roast, trimmed and bone removed

6 garlic cloves, chopped
2 tablespoons rosemary, chopped

¼ cup olive oil

our food processor mix garlic with fennel seeds, ground fennel, rosemary, red pepper, some black pepper and the olive oil and blend well.
Place pork roast in a baking pan, spread paste you’ve made and rub well.
Season with salt and pepper, put in the oven at 400 degrees F and bake for 1 hour.
Reduce heat to 325 degrees F and bake for another 35 minutes.
Take pork roast out of the oven, transfer to a cutting board and leave aside for 10 minutes.
Carve roast into chops, divide between plates and serve right away!

Hearty Pot Roast

Ingredients:
4-pound pot roast
3 potatoes, sliced
3 carrots, sliced

Directions:
Place potatoes, carrots and onions in your crock pot.
Sprinkle salt and pepper on meat and place it on top of the veggies.

Thai Beef Salad

Ingredients:
2 sirloin beef steaks
3 and ½ tablespoons clean soy sauce
2 tablespoons clean oyster sauce
4 tablespoons lime juice
2 tablespoons palm sugar+ 1 teaspoon
1 big lettuce, leaves torn
1 cup bean sprouts
1 handful basil, chopped
1 cup coriander, chopped
1 cup papaya, peeled and chopped
1 cup cherry tomatoes, sliced
2 tablespoons clean fish sauce
A pinch of cayenne pepper
Directions:
In a bowl, mix oyster sauce with 2 tablespoons soy sauce, 1 tablespoon lime juice and 2 tablespoons sugar.
Add the steaks to this mixture, toss and leave in the fridge for 10 minutes.
Meanwhile, in an another bowl, mix fish sauce with 3 tablespoons lime juice, 1 and ½ tablespoon soy sauce, cayenne pepper and 1 teaspoon sugar, stir and leave aside.
Heat up a grill over medium high heat, add steaks, grill for 3-4 minutes on each side, transfer to a cutting board and cut into thin strips.
In a large salad bowl, mix lettuce leaves with bean sprouts, basil, coriander, papaya and tomatoes.
Add salad dressing, beef strips, toss and serve right away.

2 beef steaks, sliced
10 ounces coconut milk
1 yellow onion, chopped
2 cups pineapple, cut into chunks
2 cups cherry tomatoes, halved
3 tablespoons olive oil
¼ cup clean beef stock
2 bay leaves
2 tablespoons red wine
A handful coriander leaves, chopped
1 stalk lemongrass, chopped
2 red chilies, chopped
4 garlic cloves, minced
1 teaspoon ginger, grated
½ teaspoon coriander, ground
¾ teaspoon turmeric
2 tablespoons palm sugar
1 and ½ tablespoons tomato paste
2 tablespoons lime juice
3 tablespoons clean soy sauce
1/8 teaspoon cardamom, ground
Directions:
In your food processor, mix lemongrass with chilies, garlic, ginger, coriander, turmeric, sugar, tomato paste, soy sauce, lime juice and cardamom, blend and leave aside.
Meanwhile, heat up a pan with the oil over medium heat, add onions, stir and cook for 2 minutes.
Add stock, reduce heat and boil until it thickens.
Add beef, stir and cook for another 3 minutes.
Add wine, curry paste you’ve prepared earlier, coconut milk, bay leaves and pineapples, stir, cover, reduce heat to medium low and simmer for 40 minutes.
Add tomatoes and cook for another 10 minutes.
Divide curry into bowls and serve with chopped coriander on top.

½ tablespoon red pepper flakes
2 tablespoons white wine vinegar
Directions:
Heat up a large pan with the oil over medium high heat, add beef strips, brown for 2 minutes on each side, transfer to a plate and leave aside for now.
Heat up the same pan over medium heat, add garlic, stir and cook for 1-2 minutes.
Add ground beef, scallions, celery, beef stock, black pepper, cinnamon and soy sauce, stir and bring to a boil.
Take off heat, add bean sprouts, stir, cover and leave aside for a few minutes
ladle soup into bowls and serve with beef strips, chopped cilantro, red pepper flakes and vinegar on top

Exotic Beef Dish

1 pound beef steak, cut into thin strips
½ cup red curry paste
1 cup coconut milk
1 tablespoon palm sugar
2 tablespoons clean soy sauce
1 teaspoon turmeric, ground
Cooking spray
2 tablespoons coconut cream
1 tablespoon red curry paste
1 cup clean chicken stock
1 tablespoon peanut butter
1 tablespoon lime juice
Directions:
In a bowl, mix beef with ½ cup red curry paste, ½ cup coconut milk, sugar, 1 tablespoon soy sauce and turmeric, toss well and keep in the fridge for 30 minutes.
Heat up your kitchen grill over medium heat, thread the beef onto skewers, spray them with some cooking oil, place them on the grill and cook for 5 minutes.
Divide beef between plates and leave aside for now.
Meanwhile, heat up a small pan over medium heat, add the coconut cream and heat it up for 2 minutes,
Add the rest of the red curry paste and the rest of the coconut milk and stir very well.
Add stock, peanut butter, the rest of the soy sauce and lime juice, stir, reduce heat to low and simmer for about 10 minutes.
Serve your beef with this amazing peanut sauce drizzled all over.

Pork and Rice Soup

Ingredients:

3 garlic cloves, minced
8 ounces pork, ground
A small bunch cilantro, chopped
A pinch of salt and black pepper
5 tablespoons clean tamari sauce
1 egg white, whisked
8 cups clean chicken stock
1 stalk lemongrass, chopped
1 slice galangal
4 cups brown rice, already cooked
3 tablespoons clean soy sauce
4 eggs
A pinch of ginger, grated
2 spring onions, chopped
A handful coriander, chopped
Directions:
In a bowl, mix pork with garlic, salt, pepper, 2 tablespoons tamari sauce, chopped cilantro and egg white and stir.
Shape your meatballs using your wet palms and leave them aside for now.
Heat up a pot with water, bring to a boil, drop meatballs in it and boil until they begin to float.
Drain them and leave aside for now.
Put 4 eggs in a pot filled with water, bring to a boil over medium high heat,, turn the heat off, cover and leave them to sit for 15 minutes.
In a large pot, mix chicken broth with galangal and lemongrass, stir, bring to a boil over medium high heat and simmer for 10 minutes.
Add rice, soy sauce and the rest of the tamari sauce and boil for a few minutes more.
