Grant laughed richly and grabbed Georgie’s hand to tug her towards the rest of the family. “Come on, we need to get you my Mom’s famous bourbon lemonade before she runs out,” he said and wrapped his arm around her waist.

“Shawna’s Kitchen Sink Muffins” Strawberry Banana Quinoa Bran Muffins
Information:
Prep time: 15 minutes
Cook time: 30 minutes
Serves: 9

Ingredients:
2 cups wheat bran
2 cups all-purpose flour
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1/2 tsp salt
1 large banana, mashed
1 cup hot water
1 cup brown sugar
1/2 cup white sugar
1/3 cup cooked quinoa
6 oz container strawberry banana Greek yogurt
1/3 cup finely chopped strawberries

Directions:
Preheat oven to 350 degrees Fahrenheit. Grease large muffin pan with cooking spray.
In small bowl - mix together all-purpose flour, baking soda, baking powder, salt. Mix chopped strawberries in flour.
In small bowl - mix together wheat bran and hot water.
In medium bowl - mix together mashed banana, brown sugar, sugar, strawberry banana Greek yogurt, and cooked quinoa. Mix together flour mixture, wheat bran mixture, and wet mixture.
Spoon batter into muffin cups about 3/4 full. Bake for 25-30 minutes depending on oven, check with toothpick to ensure cooked through.

Note: I used leftover cooked quinoa for this recipe. If you need to make quinoa, cook 1/2 cup quinoa in 1 cup water. You could use any flavor Greek yogurt, and any fruit combination for this recipe, basically use whatever you have in your fridge at the time, or what is in season!
Danny’s Chicken Tortilla Soup
Information:
Prep time: 10 minutes
Cook time: 30 minutes
Serves: 4-6

Ingredients:
10 cups chicken stock
14 oz can diced tomatoes,
drain 1/3 of the liquid off.
1/3 cup onion, diced
4 cloves of garlic, diced finely
1/2 cup green bell pepper, diced
1 cup shredded chicken
1 tsp Gourmet Garden fresh oregano paste
(or more if you choose)
1 tsp Gourmet Garden fresh cilantro paste
(or more if you choose)
1/2 tsp Gourmet Garden red pepper paste
(or more if you choose)
1 avocado, cubed
Shredded cheese
Greek yogurt
Salsa
Tortilla Chips, broke-up

Directions:
For the chicken- use cooked whole chicken available at most stores, shred, then add one cup to soup recipe.
For Soup: turn stove-top to medium-high heat. In large stock-pot add chicken stock, then add the can of diced tomatoes, onion, garlic, bell pepper, and let cook for about 15 minutes. Next, add oregano, cilantro, red pepper, and chicken. Let cook together for another 10-15 minutes.
Add shredded cheese in bowl, then add soup, top with cubed avocado, and Greek yogurt.
Enjoy!
Note: If your store does not have premade chicken and you do not have extra chicken in the fridge, roast a whole chicken in advance. Then use extra for other fun recipes.
“Thank you” No-Bake Booze Berry Cheesecake
Information:
Prep time: 30 minutes
Cook time: 5 minutes
Serves: 12

Ingredients:
For the Crust:
1/4 cup toasted pecans, chopped
3 cups chocolate graham cracker crumbs
1/2 cup (1 stick) salted butter, melted
1/2 cup Baily's Irish Cream
2 Tbsp sugar
For the Filling:
2 (8oz) pkgs of cream cheese, softened
1 cup blueberry Greek yogurt
2/3 cup sugar
1 tsp vanilla extract
1/2 cup Baily's Irish Cream
1 cup fresh blueberries

Directions:
Preheat oven to 350 degrees Fahrenheit. Spray 10-inch spring form pan with cooking spray.
In small sauce pan, on medium heat, toast chopped pecans for about 3-5 minutes.
In medium bowl - Mix together toasted pecans, chocolate graham cracker crumbs, melted butter, Baily's Irish Cream, and sugar. Spread out in sprayed spring form pan, and spread around sides of pan. Bake the crust for about 5-8 minutes depending on the oven. Let cool.
In medium bowl - Mix together softened cream cheese, blueberry Greek yogurt, sugar, vanilla extract, and Baily's Irish Cream. Mix ingredients with a hand mixer or a KitchenAid mixer. Fold in the fresh blueberries to the cheesecake filling. Spread the filling out evenly in bottom of spring form pan. Refrigerate for 8-12 hours or overnight to let cheesecake set up completely.

Drunken Pineapple Cocktail
Information:
Prep time: Less than 5 minutes
Serves: 1

Ingredients:
1 Tbsp of pineapple soaked in vodka, finely diced
Sparkling Wine, pre-chilled
1 Tbsp Creme de Cassi

Directions:
To soak pineapple- In airtight jar, add sliced pineapple and fill with favorite vodka. Let soak for at least two days or up to a week.
In a Champagne glass - add the finely diced pineapple, add the sparkling wine until flute is 3/4 full, then top with Creme de Cassi.

Another book and more wonderful discoveries about myself. This writing adventure just keeps getting better and better. I have met some amazing readers and authors that I truly adore, and even found a new love for grammar (high school never made it this fun).
My first thank you will always go to my angel, my husband. Since becoming a full-time author in the beginning of 2017, I really treasure how much my husband supports this crazy adventure. I’m truly blessed.
My designer and I met back in 2010 when I started my food blog. Now in 2017, I consider her my friend, too. I throw so many different ideas her way and she always comes back with a masterpiece. I love the designer/author relationship we have been able to build.
