Chance of Loving You

  Great with grilled fish (or chicken, pork, chips)!

  Ingredients:

  1½ cups diced fresh pineapple

  1 cup diced fresh mango

  ¼ cup diced red pepper

  ¼ cup diced cucumber

  ¼ cup chopped red onion

  1/3 cup chopped cilantro

  3 T. mild Anaheim pepper, finely chopped (may use hotter variety of pepper, or omit green pepper altogether for a sweeter salsa)

  1 clove garlic, minced

  Juice of 1 large lime

  Salt to taste

  In medium bowl, combine all ingredients; stir well. Season with salt as desired. Serve at room temp or chilled.

  Makes about 3½ cups.
