  Ingredients:

  4 nectarines or peaches

  300 grams of natural low-fat yogurt

  50 grams of roasted almonds

  3 eggs

  Half a teaspoon of almond extract

  Vanilla sachet

  Sweetener to taste (preferably stevia, so as not to add carbohydrates)

  Separate the proteins from the yolk. Proteins should be cooled in a refrigerator. Two yolks are superfluous, we leave them for delicious little eggs. And one yolk whisk with yoghurt, sweetener, almond and vanilla extract. Preparing the fruit. If you have nectarines, then they are not necessary to peel from the skin. Peaches will need to be cleaned. It is very easy to peel fruit from the skin, if you quickly pour it over with boiling water. Fruit should be finely chopped. Now remove the proteins, and whisk them until tight peaks form. It should be so thick foam that, turning the container, the proteins will not drip onto the table. Stir gently and gradually into the yoghurt mixture, fruits and chopped nuts. In contrast to serving ice cream in cups, the classic Semifredo is served in thin slices. Therefore, take a shallow pan, a couple of centimeters high. Cover it with food film. Put the mixture of ice cream, and put in the freezer for 3 hours.
