6 tablespoons unsalted butter (melted)
¼ cup sugar
3 ounces semi-sweet chocolate chips (plus extra for decorating)
¼ cup sweetened condensed milk
1 cup cold milk
1 package instant chocolate pudding mix
4 ounces whipped topping (optional)
Directions
1. In a small bowl, combine graham cracker crumbs with butter and sugar, and stir until mixed well.
2. Press the mixture against the bottom and sides of a 9-inch pie pan until completely covered. You can use your fingers or a spoon.
3. Put chocolate chips in a microwave-safe bowl and heat for thirty seconds at full power.
4. Mix the sweetened condensed milk into the softened chocolate chips and stir until smooth. Pour the mixture on top of the graham cracker crust and spread evenly with a spoon or spatula.
5. In a large bowl, combine the cup of milk and the pudding mix, whisking or stirring with a fork until smooth. Set aside for 3 minutes, or until pudding has started to set.
6. Pour the pudding into the crust on top of the chocolate chip layer.
7. Chill the mud pie in the refrigerator for three hours, until it’s completely set.
8. Decorate the mud pie with whipped topping and chocolate chips, if you want to. (You can buy whipped topping or make your own by beating whipping cream until it’s stiff.)
Then cut and serve!
