Nicole Emens (Nana’s Sauce)
This is the one my Nana taught me. She came to the U.S from Hungary in the early 1900's. She taught me how to cook, and boy oh boy, could she cook!
She came through Ellis island and her name is on the wall there. I have the first dollar she ever made here in the USA, an 1892 Morgan. She worked in the sweat shops in NYC until they were shut down.
She was an amazing woman!
4 TBS olive oil
3/4 cup onion chopped fine,
4 cloves garlic chopped fine
30 oz tomato sauce
1 cup catsup
4 TBS cider vinegar
4 TBS lemon juice
4 TBS sweet vermouth
1/2 cup dark brown sugar
4 TBS chili powder
2 TSP Paprika
2 TSP dry mustard powder
1/4 black pepper
Sautee onions in oil until translucent than add garlic, sauté until brown, add rest of ingredients and bring to a simmer, let it simmer for 30 min.
Now it's ready to be placed in jars
Kathleen Fettig’s Barbeque Sauce
Here is my own recipe for bbq sauce. I love this in a crock pot with country ribs or added to a cowboy beans recipe.
1 pint ketchup - Hunts
1/3 cup brown sugar
1/2 cup chopped onion
2 TBL mustard (prepared)
1/3 cup molasses
1/3 cup water
2 TBL vinegar
If using on meat being grilled, make the recipe and simmer it for half an hour to blend all the flavors before using. I usually use this in a crock pot.
Tim Bischoff’s Sweet/Spicy Kentucky Bourbon BBQ Sauce
All ingredients should be organic or best quality
About 1 half gallon = final result
3 ½ cups of Tomato Paste
3 ½ cups of Apple Cider Vinegar
1 cup of Even Williams Bourbon (preferably Even Williams 1782 aged 10 years, Black label will do)
1 cup of Brown Sugar
1 cup of White Cane Sugar
1 cup of Molasses
2.5 oz of Worcestershire sauce
1 ½ tbsp of paprika
2 ½ tsp of fresh ground pepper
2 ½ tsp of fine kosher salt
2 ½ tsp of Franks Red Hot sauce
½ tsp of chipotle powder
¼ stick of butter
1 sweet onion finely minced (sautéed in the butter)
2 cloves of Garlic finely minced (sautéed in the butter)
Up to 1 bottle of KY Bourbon Barrel Ale (if not available in your area, another beer or water can be used)
1. Sautee the onion and garlic in a soup pot (large enough so mixing is easy)
2. Next add other ingredients (except water) slowly into the pan mixing well
3. Next add 1 cup of the water whisking well.
4. Simmer slowly for about an hour and half
Note: Franks Red Hot Sauce, Chipotle Powder can be adjusted if you like your sauce less spicy (try making a smaller batch to find your own desired taste)
Tim Bischoff’s KY Dry Rub
(Optional as additional flavor as heavy or light as desired)
• 3 tablespoons Bourbon-infused Salt (kosher salt will work as a substitute)
• 3 tablespoons chili powder
• 3 tablespoons paprika
• 2 tablespoons fresh ground black pepper
• 2 tablespoons brown sugar
• 2 tablespoons dry mustard
• 1 tablespoon chipotle powder
• 1 tablespoon garlic powder
Smoking needs
A good quality smoker to maintain temperature around 200 degrees
Staves from used bourbon barrels cut into small pieces to produce a unique smoke flavor.
Other woods can be used depending on a person’s taste such as Hickory, Mesquite, Apple. Not just any wood can be used to produce a quality product.
Baste meats about every thirty minutes.
Cooking time will vary depending on the type and thickness of the meat, but this is a long slow process.
