  Ginger Chicken Soup

  Ingredients:

  3 ginger herbal tea bags

  2 cups hot water

  4 cups chicken stock

  1 chicken breast, skinless, boneless, cooked and cubed

  2 garlic cloves, minced

  Salt and black pepper to the taste

  2 carrots, chopped

  1/3 cup parsley, chopped

  Directions:

  Put hot water in a bowl, add tea bags, leave aside for 5 minutes, discard bags and transfer tea to a pot.

  Add chicken, stock, garlic, salt, pepper and carrots, stir, bring to a boil over medium-high heat, simmer for 15 minutes, add parsley, ladle into bowls and serve.

  Ingredients:

  2 cranberry tea bags

  ½ cup hot water

  1 celery rib, chopped

  ½ cup avocado mayonnaise

  1 red apple, cored and chopped

  ½ cup smoked chicken breast, skinless, boneless, cooked and shredded

  1 teaspoon thyme, chopped

  1 cucumber, sliced

  Sunflower sprouts

  Directions:

  Put the hot water in a bowl, add tea bags, cover, leave aside for 5 minutes and discard bags.

  In a bowl, mix chicken with celery, apple, thyme, cucumber, mayo, sunflower sprouts and 2 tablespoons tea, toss and serve.

  Chicken and Peach Tea Mix

  Ingredients:

  6 peach tea bags

  1 whole chicken, cut into medium pieces

  ¾ cup water

  Salt and black pepper to the taste

  ¼ cup olive oil

  Directions:

  Put the water in a pot, bring to a simmer over medium heat, add tea bags and the chicken, simmer for 10 minutes and transfer the pieces to a plate.

  Pat dry the chicken, rub with the oil, season with salt and pepper, place on preheated grill over medium-high heat, cook for 10 minutes on each side, divide between plates and serve with a side salad.

  Ingredients:

  4 cinnamon tea bags

  4 cups hot water

  2 garlic cloves, minced

  1 yellow onion, chopped

  2 tablespoons olive oil

  3 pounds chicken meat, cut into medium pieces

  Salt and black pepper to the taste

  15 ounces canned tomatoes, crushed

  3 tablespoons parsley, chopped

  ½ cup almonds, roasted and chopped

  Directions:

  Put the hot water in a bowl, add tea bags, cover, leave aside for 6 minutes and discard tea bags.

  Put tea in a pot, add chicken, bring to a boil over medium heat, cover, simmer for 20 minutes and transfer to a plate.

  Heat up a pot with the oil over medium-high heat; add garlic and onion, stir and sauté for 6 minutes.

  Add chicken, stir and cook for 10 minutes more.

  Add tomatoes, stir and cook for 10 minutes more.

  Add salt and pepper, almonds and parsley, stir, divide into bowls and serve.

  Apricot and Pineapple Chicken

  Ingredients:

  ½ cup apricot preserves

  ½ cup pineapple preserves

  1 tablespoon coconut aminos

  1 yellow onion, chopped

  ¼ teaspoon red pepper flakes

  1 tablespoon olive oil

  Salt and black pepper to the taste

  6 chicken legs

  Directions:

  In a bowl, mix the coconut aminos with pepper flakes, apricot and pineapple preserves and whisk.

  Heat up a pan with the oil over medium-high heat, add chicken pieces, cook them for 5 minutes on each side and transfer to a bowl.

  Spread onion on the bottom of a baking dish and top with chicken pieces.

  Season with salt, pepper, drizzle the aminos mix, introduce in the oven at 350 degrees F and bake for 45 minutes.

  Divide everything between plates and serve.

  3 zucchinis, cut with a spiralizer

  Directions:

  In a pot, combine the turkey with the tomatoes, basil, garlic, salt and pepper, stir, cover; bring to a simmer over medium-high heat and cook for 2 hours.

  Add zucchini noodles, stir, cook for 15 minutes more, divide into bowls and serve.

  2 cups chicken stock

  2 cups butternut squash, peeled, deseeded and cubed

  1 red bell pepper, chopped

  1 yellow onion, chopped

  2 tablespoons red curry paste

  1 tablespoon ginger, grated

  Directions:

  Heat up a pot over medium-high heat, add turkey breasts, brown them for 4 minutes on each side, add stock, squash, onion, bell pepper, curry paste and ginger, stir, bring to a simmer and cook for 1 hour and 30 minutes.

  Add the coconut milk, stir, cook for 30 minutes more, ladle into bowls and serve.

  Turkey Meatballs and Almond Sauce

  Ingredients:

  1 pound turkey meat, ground

  1 yellow onion, minced

  4 garlic cloves, minced

  ¼ cup parsley, chopped

  Salt and black pepper to the taste

  1 teaspoon oregano, dried

  1 egg, whisked

  ¼ cup almond milk

  2 teaspoons coconut aminos

  12 mushrooms, chopped

  1 cup chicken stock

  2 tablespoons olive oil

  2 tablespoons ghee

  Directions:

  In a bowl, mix turkey meat with salt, pepper, onion, garlic, parsley, oregano, egg and aminos, stir and shape medium meatballs out of this mix.

  Heat
up a pan with the oil over medium-high heat, add meatballs and cook them for 6 minutes on each side.

  Heat up another pan with the ghee over medium heat, add the milk, mushrooms and stock, stir and bring to a simmer.

  Add the meatballs, cover the pan and cook for 10 minutes.

  Divide everything into bowls and serve.

  2 teaspoons lime juice

  Zest of 1 lime, grated

  1 teaspoon cumin, ground

  1 teaspoon sweet paprika

  Directions:

  In a bowl, mix turkey meat with salt, pepper, cumin, paprika, shallot, jalapeno, lime juice and zest, stir and shape medium cakes from this mix.

  Heat up a pan with the oil over medium-high heat, add turkey burgers, cook for 5-6 minutes on each side, divide between plates and serve with a side salad.

  5 cups chicken stock

  1 and ½ cups cauliflower florets, chopped

  15 ounces canned tomatoes, chopped

  Directions:

  Heat up a pot with the oil over medium-high heat, add shallots, cauliflower, bell pepper and carrots, stir and cook for 10 minutes.

  Add turkey, tomatoes, salt, pepper and stock, stir, bring to a boil and cook for 30 minutes.

  Ladle into bowls and serve.

  6 chives, 2 of them sliced

  1 peach, cut into8 wedges

  3 ounces turkey breast, cooked and cut into8 pieces

  Directions:

  Roll 2 peach wedges and some chopped chives in 2 slices of turkey.

  Wrap this roll in 1 chive, tie in a knot and place on a plate.

  Repeat this with the rest of the ingredients and serve with a side salad.

  Ingredients:

  3 teaspoons olive oil

  1 green bell pepper, chopped

  1 pound turkey meat, ground

  1 tablespoons garlic, minced

  1 yellow onion, chopped

  1 teaspoon ancho chilies, ground

  1 tablespoon chili powder

  8 ounces canned green chilies and juice, chopped

  8 ounces tomato paste

  15 ounces canned tomatoes, chopped

  2 cups beef stock

  Salt and black pepper to the taste

  Directions:

  Heat up a pan with 2 teaspoons oil over medium heat; add turkey, stir, brown well on all sides and transfer to a pot.

  Heat up the pan with the rest of the oil over medium heat, add onion, green bell pepper, garlic, chili powder, ancho chilies, salt and pepper, stir and cook for 6 minutes.

  Transfer this to the pot with the turkey meat, add green chilies, tomato sauce, chopped tomatoes and stock, stir, cover the pot, bring to a boil and cook for 1 hour.

  Ladle into bowls and serve.

  Turkey Casserole

  Ingredients:

  ¼ cup onion, chopped

  1 pound turkey meat, ground

  1 eggplant, chopped

  1 tablespoon garlic, minced

  8 ounces tomato paste

  15 ounces canned tomatoes, chopped

  A pinch of salt and black pepper

  ¼ teaspoon chili powder

  ¼ teaspoon cumin, ground

  Cooking spray

  ½ teaspoon tarragon, dried

  Directions:

  Heat up a pan over medium heat, add onion, turkey and garlic, stir brown for a few minutes and transfer to a bowl.

  Heat up the same pan over medium heat, add tomatoes, tomato paste, eggplant, salt, black pepper, chili powder, cumin and tarragon, stir, cook for 4 minutes more and transfer to a baking dish sprayed with cooking oil.

  Top with turkey mix, toss a bit, introduce in the oven and bake at 350 degrees F for 1 hour.

  Divide between plates and serve.

  Directions:

  In a bowl, mix turkey with salt, pepper, egg, flour, garlic powder, sun-dried tomatoes, mozzarella and oregano, stir and shape medium meatballs out of this mix.

  Heat up a pan with the oil over medium-high heat, add the meatballs. Cook them for 3 minutes on each side, divide between plates and serve with a side salad.

  Add garlic powder, kale, thyme, paprika, salt, pepper and cheddar cheese, stir, cook for 10 minutes more, divide into bowls and serve.

  3 cups turkey meat, cooked and shredded

  ½ cup veggie stock

  Directions:

/>   Heat up a pan with the stock over medium-low heat, add egg, cream cheese, cheddar cheese, salt, pepper and garlic powder, stir and bring to a gentle simmer.

  Add turkey meat and cabbage, stir and take off heat.

  Place zucchinis in a baking dish, add turkey mix, spread, cover with tin foil, introduce in the oven at 400 degrees F, bake for 35 minutes, divide between plates and serve.
