Fava Beans For Breakfast Page 31

  •2 ½ cups stock

  •400g tomato paste

  •1 tablespoon butter

  •Oil

  •Salt, pepper, paprika, cinnamon, to taste

  •Juice of 1 lemon

  •Pickles, lemon wedges and sliced fresh chilli, to serve

  Method

  1Trim both ends of the bamya and cut each bamya in half on the diagonal. Put aside.

  2In a deep pan add butter and a few lugs of oil. Add onions and stir. Once they are brown, add the garlic.

  3Then add the meat and stir occasionally until the meat is completely cooked.

  4To make the tomato sauce, add the stock and the tomato paste into the same pan and stir until it is mixed through. Season with salt, pepper, paprika, cinnamon and let the tomato sauce come to a boil for a few minutes.

  5Add the bamya. After 5 minutes, reduce the heat to low and add lemon juice.

  6Cook for 20 minutes or until the okra is soft. Serve over hot rice. Accompany with pickles, wedges of lemon, and for extra warming of the heart, slices of fresh chilli.
