  Serves 6-8

  Ingredients:-

  1 Pie Crust, chilled

  2/3 cup Oats

  2/3 cup Corn Syrup

  ¾ cup Sugar

  2 Eggs

  6 tablespoons Butter, softened

  1 teaspoon Vanilla Extract

  Directions:-

  Pre-heat the oven to 325 degrees.

  Roll out the pie crust dough and transfer to a pie plate. Pop into the fridge to chill while you prepare the filling.

  Whip sugar and butter together in an electric mixer.

  Stir in eggs, corn syrup and vanilla extract; beat until all ingredients are well incorporated.

  Stir oats in the mixture with a spatula.

  Spoon filling into prepared pie crust and spread evenly.

  Pop into the oven to bake for 45 minutes.

  Let pie cool at room temperature before serving.

  1 hour 10 minutes

  Ingredients:-

  1 Pie Crust, chilled

  2 Eggs

  2 cups Buttermilk

  1 cup Sugar

  2 tablespoons All-Purpose Flour

  2 tablespoons Butter, melted

  1 teaspoon Lemon flavoring

  Directions:-

  Pre-heat the oven to 400 degrees.

  Roll out the pie crust dough and transfer to a pie plate

  Beat together sugar and flour in a mixing bowl.

  Pour in beaten eggs, butter, buttermilk and vanilla extract, stir all ingredients to combine thoroughly.

  Spoon filling into prepared pie crust and spread evenly with the back of a spatula.

  Bake for 10 minutes at 400 degrees before turning the heat of the oven down to 350 degrees and bake for another 50 minutes.

  Ingredients:-

  1 Pie Crust, chilled

  ½ cup Creamy Peanut Butter

  ½ cup Sugar

  1½ cups Corn Syrup

  4 Eggs

  ½ teaspoon Vanilla Extract

  ¼ teaspoon Salt

  Directions:-

  Pre-heat the oven to 350 degrees.

  Roll out the pie crust dough and transfer to a pie plate

  Beat together sugar, peanut butter, corn syrup and salt in a large mixing bowl until combined thoroughly.

  Add eggs and vanilla, continue beating until mixture is creamy and lump-free.

  Spoon filling into prepared pie crust and spread evenly with the back of a spatula.

  Pop into the oven and bake for 60-70 minutes. Remove pie from oven in the final 30 minutes of baking to loosely cover with a piece of foil.

  Let pie first cool at room temperature before chilling in the fridge for at least 2 hours before serving.

  Ingredients:-

  1 Pie Crust

  1½ cup Sugar

  2/3 cup Evaporated Milk

  2 Eggs, lightly beaten

  4 tablespoons unsweetened Cocoa Powder

  4 tablespoons Butter, melted

  1 teaspoon Vanilla Extract

  1/8 teaspoon Salt

  Directions:-

  Pre-heat the oven to 350 degrees.

  Roll out the pie crust dough and transfer to a pie plate.

  Combine sugar and cocoa powder in a medium mixing bowl and mix well.

  Next, stir in eggs, evaporated milk, vanilla, butter and salt; whisk together to combine all ingredients thoroughly.

  Pour filling into prepared pie crust.

  Bake for 45 minutes.

  Let pie cool completely at room temperature before serving.

  Old-Fashioned Tomato Pie

  Flaky and buttery crust with a savory and tasty filling with fresh tomatoes and a variety of aromatic herbs. Who can resist?

  Serves 8

  Ingredients:-

  1 Pie Crust, blind baked

  2¼ pounds Heirloom Tomatoes, cut into thin slices

  1 Sweet Onion, chopped

  ½ cup fresh Herbs (chives, parsley, basil etc), chopped

  ½ cup Gruyere Cheese, grated

  ½ cup Parmigiano-Reggiano, grated

  ¼ cup Mayonnaise

  1¼ teaspoons Salt, divided

  1¼ teaspoons Pepper, divided

  Directions:-

  Pre-heat the oven to 350 degrees.

  Next, prepare the filling by first removing any excess liquids from the tomatoes. Layer sliced tomatoes on paper towels and sprinkle 1 teaspoon salt over. Leave the tomatoes to stand for 10-15 minutes.

  Heat up 1 tablespoon olive oil in a medium skillet over medium heat and throw in onion and ¼ teaspoon of salt and ¼ teaspoon pepper.

  Cook onion for about 3-5 minutes.

  Transfer sautéed onion into the pre-baked pie crust and add tomatoes and herbs. Ground fresh pepper over the ingredients. Layer ingredients in 2-3 layers if required.

  Mix parmigiano-reggiano, gruyere and mayonnaise together in a medium bowl; spread mixture over the pie filling.

  Pop pie into the oven to bake for 30 minutes.

  Ingredients:-

  1 pack Corn Muffin Mix, prepared but do not cook

  ¾ pound ground Beef

  1 cup Onion, chopped

  1 cup Green Bell Pepper, chopped

  1 clove Garlic, finely chopped

  2½ cups Diced Tomatoes

  1½ cup Corn Kernel

  ½ cup Black Olives, chopped

  1¼ cups Cheddar, grated

  1 tablespoon Sugar

  1 teaspoon Chili Powder

  1 teaspoon Salt

  1/8 teaspoon Pepper

  Directions:-

  Pre-heat the oven to 375 degrees and lightly grease a casserole dish.

  In a medium skillet, heat up 1 tablespoon olive oil and cook onion and bell pepper for about 4-5 minutes.

  Stir in ground beef and cook for another 5 minutes to brown.

  Once all the ground beef has browned, drain all excess fat before throwin in the diced tomatoes, corn, olives, garlic, salt, pepper, chilli powder and sugar.

  Let mixture come to a simmer and reduce the heat. Cook for 30 minutes to let mixture thicken slightly.

  Stir in cheese and combine well.

  Pour mixture into greased casserole dish and top with corn muffin mix.

  Cook for 30-40 minutes or until the topping has turned a golden brown color.

  Serve warm with a generous dollop of sour cream.

  Mincemeat Pie

  Mincemeat pies have been around for hundreds of years and it really is no wonder why. You can never go wrong with making a delicious flaky pie crust filled with savory and tasty meat filling!

  Serves 8-10

  1 hour

  Ingredients:-

  2 Pie Crusts

  1 pound ground Beef

  1½ pounds Apples, chopped

  1 cup Apple Cider

  ½ cup Raisins

  ½ cup dried Currants

  8 tablespoons Butter, melted

  ½ tablespoon Mace

  ½ tablespoon ground Cinnamon

  ¾ teaspoon Salt

  Directions:-

  Pre-heat the oven to 400 degrees.

  Roll out 1 portion of pie crust dough and transfer to a pie plate.

  Next, prepare the mincemeat filling: start by bringing a pot of water to the boil and cooking the ground beef until it changes color to brown.

  Pour the mixture over a strainer to drain the water and sprinkle salt over the cooked beef.

  Mix apples, butter, cider, spices, raisins and currants in a mixing bowl until well combined.

  Stir in beef and mix some more to incorporate the beef into the mixture.

  Spoon the filling mixture into the prepared pie crust and spread evenly.

  Roll out the other portion of pie crust dough and gently place over the filling, sealing the edges of the pie with a fork.

  Using a sharp knife, cut slits on the top crust.

  Pop pie into the oven to bake for 45 minutes.

  Let pie cool for 15 minutes before slicing to serve.

  Ingredients:-

  1 Graham Cracker Pie Crust, blind baked

  1 cup Whipping Cream

  1 cup Lemon Juice

  1/3 cup Sugar

  2 cans (10oz) Condensed Milk

  9 Egg Yolks

  2 teaspoons Icing Sugar

  1 teaspoon Vanilla Extract

  Zest of 2 Lemons

  Directions:-

  Pre-heat the oven to 325 degrees.

  Set up an electric mixer and beat cream, icing sugar and vanilla until soft peaks form.

  Remove mixing bowl with the cream mixture, and add a separate mixing bowl in the electric mixer.

  Add egg yolks and 1/3 cup of sugar; whip at high speed for 5 minutes until foamy.

  Gradually add condensed milk, beating to combine well, and then pour in lemon juice and zest.

  Fold in the cream mixture into the egg mixture.

  Spoon mixture into pre-baked pie crust and spread evenly.

  Pop pie into the freezer overnight, covered, and serve frozen.

  Ingredients:-

  1 Pie Crust, blind baked

  1½ cups Milk

  8 tablespoons Butter

  1½ cups Brown Sugar

  4 Egg Yolks

  5½ tablespoons All-Purpose Flour

  ¼ teaspoon Salt

  For the Meringue:

  ½ cup Sugar

  4 Egg Whites

  1 teaspoon Vanilla Extract

  Directions:-

  Pre-heat the oven to 350 degrees.

  Heat up a double boiler over medium heat and boil water in the bottom part of the broiler. Once the water comes to a boil, set the top pan onto the broiler and slightly reduce the heat so that the water is now at a slight boil.

  In a separate saucepan, heat milk over medium heat, stirring all the time.

  In another medium saucepan, melt butter over medium heat and remove from the heat immediately once the butter has melted.

  Stir in sugar, followed by egg yolks, flour and salt.

  Once the milk has just started to boil, pour egg and sugar mixture in and stir. Cook on medium heat and bring mixture to a boil.

  Pour the sugar and milk mixture into the top pan of the broiler once the water in the lower pan has started boiling. Cook for 15 minutes, stirring all the time so that the mixture does not burn.

  Transfer mixture into the pre-baked pie crust.

  Next, prepare the meringue: combine all ingredients into a mixing bowl and beat with an electric mixer medium speed until foamy.

  With a spoon, top the pie with the meringue, swirling it into peaks.

  Bake pie for 15 minutes or until the top of the meringue is a light golden brown.

  Place molasses in a heat-proof bowl and pour in boiling water and baking soda. Stir to combine.

  Transfer the molasses filling into prepared pie crust.

  Stir flour mixture into the pie filling and mix well.

  Pop pie into the oven and bake for 25 minutes.

  Let pie cool on a rack before serving.

  Directions:-

  Place water in a medium pot and let water come to a boil over high heat.

  In the meantime, mix together eggs, sugar, flour, vinegar and salt in a large bowl and combine well.

  Pour mixture into boiling water and let mixture boil for another 10 minutes to thicken, stirring all the time.

  When the mixture has thickened to the consistency whereby it thickly coats a spoon, take the pot off the heat.

  Stir in cinnamon and vanilla.

  Pour the mixture into the pre-baked pie crust through a sieve.

  Pop into the fridge to chill for at least 4 hours before serving.
