  Take skillet off the heat and let cool at room temperature for about 10-15 minutes.

  In a medium bowl, combine cottage cheese and egg. Set aside.

  When the rigatoni is cool enough to handle, place each piece standing up onto the greased pan, packing it all into the pan.

  Spoon cheese mixture over the rigatoni and spread evenly.

  Next, layer the meat mixture over the cheese mixture, spreading evenly.

  Push the sauce mixture into the hollowed out parts of the rigatoni.

  Pop into the oven to bake for 15 minutes.

  At the end of 15 minutes, take the pie out of the oven and top with mozzarella.

  Bake pie for an additional 15 minutes

  Spinach Pie

  Beautiful spinach pie that is as delicious as it is easy to make.

  Serves 8

  1 hour

  Ingredients:-

  1 sheet (8oz) Puff Pastry

  2 cups Spinach Leaves

  1 Yellow Onion, diced

  1 clove Garlic, finely chopped

  1 cup Cottage Cheese

  ¼ cup Parmesan, grated

  2 Eggs

  1 teaspoon Black Pepper

  ½ teaspoon Salt

  ¼ teaspoon ground Nutmeg

  Directions:-

  Have the oven pre-heated to 375 degrees.

  Heat up 1 tablespoon olive oil in a medium skillet and cook garlic and onion for about 4-5 minutes.

  Mix together cottage cheese, parmesan, eggs, nutmeg, salt and pepper in a mixing bowl, combining well.

  Squeeze the spinach leaves, removing any excess liquid, and stir into the cheese mixture.

  Once the onions have cooked until translucent and tender, remove and place into the cheese and spinach mixture, mix thoroughly.

  Roll out puff pastry into a 12-inch square and transfer onto a 9-inch pie plate.

  Spoon the filling into the pastry, spreading evenly.

  Fold in the corners of the pastry over the filling.

  Pop into the oven to bake for 45 minutes.

  Spicy Ham Pie

  A delicious baked dinner comes together easily for a wonderful meal that you will definitely make again and again. It is a great dish to whip up for days when there is a ton of leftovers in the pantry.

  Serves 8

  Ingredients:-

  ¾ cup Deli Ham, diced

  ½ cup Bisquick Mix

  1 cup fat-free Egg Product

  1 cup Water

  ½ cup Dry Milk

  ½ cup Yogurt

  1 cup Cheddar, grated

  ½ cup Green Onion, chopped

  2 tablespoons Parmesan

  ½ teaspoon ground Mustard

  ¼ teaspoon Red Pepper Sauce

  Directions:-

  Have the oven pre-heated to 350 degrees and lightly grease a pie plate with cooking spray.

  Place egg product, water, bisquick mix, dry milk, yogurt, parmesan, mustard and pepper sauce in a food processor and blend for 1-2 minutes until you get a creamy mixture.

  Transfer mixture out onto a large bowl and stir in cheddar, ham and green onions. Combine well.

  Pour filling into the greased pie plate and bake for 40 minutes.

  Cheesy Tomato Pie

  A savory and rustic pie that is reminiscent of a gorgeous Italian summer! Sweet tomatoes accentuated with cheddar and mozzarella tinged with the aromas of basil and oregano.

  Serves 8

  1 hour

  Ingredients:-

  1 Pie Crust

  ¾ cup Mozzarella, divided

  ½ cup Cheddar, divided

  3 Tomatoes, cut into thin slices

  1 cup Grape Tomatoes, cut into halves

  ¼ cup Mayonnaise

  1/3 cup fresh Basil

  1 teaspoon Salt

  ½ teaspoon Garlic Powder

  ½ teaspoon dried Oregano

  Directions:-

  Have the oven pre-heated to 450 degrees.

  Sprinkle salt over tomato slices and layer between 2 pieces of kitchen towels.

  Roll out pie crust dough and transfer into a pie plate. Poke holes into the bottom of the crust.

  Sprinkle ¼ up mozzarella over the bottom and pop into the oven to bake for 10 minutes. Let crust cool completely at room temperature.

  Mix together ¼ cup cheddar and ¼ cup mozzarella in a bowl.

  Sprinkle garlic powder, oregano and black pepper over the tomato slices before layering ½ of the tomato slices, followed by ½ cheese mixture and finally ½ of the fresh basil into the pie crust. Repeat this pattern until all ingredients are used up.

  Assemble grape tomatoes over the final layer of filling.

  Mix together ¼ cup cheddar, ½ cup mozzarella and ¼ cup mayonnaise in a bowl and randomly dot this mixture over the grape tomatoes.

  Bring the heat of the oven down to 350 degrees and bake for 30-35 minutes.

  Ingredients:-

  2 Pie Crusts

  1 cup Cream Cheese

  1 cup Smoky Cheddar, shredded

  ½ cup Sharp Cheddar, shredded

  ¾ cup Jalapenos, diced

  1 Egg + 1 tablespoon Water, mixed together

  3 tablespoons dried Parsley

  2 tablespoons Salt

  1 teaspoon Worcestershire Sauce

  Directions:-

  Have the oven pre-heated to 425 degrees.

  Combine all cheeses, jalapeno, salt and Worcestershire sauce in a food processor and pulse about 5-6 times. Set aside.

  Roll out the pie crust dough and cut out 3-inch circles using a cookie cutter.

  Spoon about 1½ teaspoons of filling onto the middle of each dough circle, and cover with another sheet of dough circle, sealing the sides with a fork.

  Brush generously with egg wash and sprinkle with any remaining cheese and dried parsley.

  Place hand pies onto a lined baking sheet and pop into the oven to bake for 10 minutes.

  Bacon and Blue Cheese Onion Pie

  1 Pie Crust, blind baked

  2 cups Caramelized Onions

  ¾ cup Blue Cheese, crumbled

  ½ cup cooked Bacon, diced

  ½ cup Milk

  2 Eggs

  2 teaspoons food-grade dried Lavender

  Directions:-

  Have the oven pre-heated to 350 degrees.

  Combine eggs and milk in a bowl, whisking to mix thoroughly.

  Add onions and bacon into the mixture and pour onto the baked pie crust.

  Top with dried lavender and blue cheese.

  Pop pie into the oven to bake for 25-30 minutes.

  Green Chile Tortilla Pie


  Whip up a delectable pie with an unconventional tortilla crust and topped with cheesy goodness, a pie that is sure to please all your guests!

  Serves 4

  Ingredients:-

  1 x 10-inch Tortilla

  1 cup Cheddar Cheese, shredded

  1 cup Monterey Jack Cheese, shredded

  1 cup Sour Cream

  1 can (4oz) Roasted Green Chiles, drained

  3 Eggs, beaten

  ¼ teaspoon Salt

  ¼ teaspoon ground Cumin

  Directions:-

  Have the oven pre-heated to 350 degrees and lightly grease a pie plate with cooking spray.

  Place tortilla into the greased pie plate and top with 2/3 of both cheeses.

  Next, layer roasted green chiles over the cheese.

  In a mixing bowl, whisk together eggs, sour cream, salt and cumin. Pour mixture into the pie plate over the layers of cheese and green chiles.

  Top with the remaining cheeses and pop into the oven to bake for 40 minutes.

  A gorgeous pie that serves as great comfort food during the hot summer days, this zucchini pie consist of fresh sliced zucchinis layered with gooey cheese set atop a sweet shortbread crust.

  Serves 4

  Ingredients:-

  1 Shortbread Pie Crust, blind baked

  3 Zucchinis, cut into thin slices

  ½ Sweet Onion, cut into very thin slices

  1 cup Cheddar or Gouda Cheese, grated

  1 tablespoon Ritz Cracker, crumbled

  1 teaspoon Black Pepper

  Directions:-

  Have the oven pre-heated to 350 degrees.

  Bring a medium pot of water to the boil and add the zucchinis in to blanch for 1 minute. Remove the zucchini slices immediately with a slotted spoon and place into a bowl of iced water. Transfer sliced zucchini onto a kitchen towel and dry thoroughly.

  Layer sweet onions onto the bottom of the baked pie crust.

  Next, assemble zucchini over the layer of onions and sprinkle salt and black pepper over everything.

  Sprinkle cheese and cracker crumbs over the top of the filling and cover pie loosely with a piece of foil.

  Pop pie into the oven to bake for 15-20 minutes.

  White Bean and Thyme Pot Pie

  Satisfying vegan white bean pot pie made even more delicious with fresh thyme! Comes together easily with ingredients commonly found in the pantry.

  Serves 6

  Ingredients:-

  1 Vegan Pie Crust

  1 can (15oz) White Beans, drained

  1 Yellow Onion, diced

  1 pound Carrots, finely chopped

  2 teaspoons fresh Thyme, chopped

  3 cups Vegetable Broth

  ½ cup White Wine

  ¼ cup All-Purpose Flour

  Directions:-

  Have the oven pre-heated to 400 degrees. Place 6 ramekins onto a baking sheet and set aside.

  Heat 2 tablespoons olive oil in a large pot and cook onion with a sprinkle of salt and pepper for about 4-5 minutes.

  Add carrots and cook for another 2-3 minutes before sprinkling flour over, tossing all ingredients to coat thoroughly in the flour.

  Cook all ingredients for 1 minute and pour in the white wine and broth, whisking combine well.

  Stir in white beans and thyme, let mixture come to a boil.

  Reduce the heat and let mixture simmer for another 3-4 minutes.

  Cover the pot and take it off the heat immediately. Set aside.

  Roll out the pie crust dough and cut out 6 squares slightly larger than the ramekins that you will be using.

  Spoon filling into the prepared ramekins and top each with a piece of dough square. Poke the crust with a fork.

  Bake the pies for 35-40 minutes.

  Basil and Gruyere Cheese Tomato Pie

  A gorgeous basil and gruyere cheese tomato pie that will be fantastic as a side dish or enjoyed for a light and simple lunch.

  Serves 8

  1 hour 45 minutes

  Ingredients:-

  2 Pie Crusts

  2½ pounds Tomatoes, assorted and cut into slices

  1 cup Vidalia Onion, chopped

  1¾ cups Gruyere Cheese, grate

  ½ cup Parmesan, grated

  ¾ cup Mayonnaise

  ½ cup fresh Basil, chopped

  1 Egg

  1 tablespoon fresh Thyme, chopped

  2 teaspoons Salt

  ¼ teaspoon Black Pepper

  Directions:-

  Roll out the pie crust dough into a 13-inch circle and transfer onto a 9-inch tart pan. Press dough down onto the bottom of the tart pan and up the sides, trimming excess dough. Pop crust into the fridge to chill while you prepare the filling.

  Layer tomato slices onto a kitchen towel and sprinkle 1 teaspoon salt over. Let tomatoes sit for 30 minutes to remove excess liquid.

  Mix together both types of cheese, mayonnaise, basil, thyme, egg 1 teaspoon salt and pepper in a mixing bowl. Combine well.

  Have the oven pre-heated to 425 degrees.

  Place onion onto the bottom of the chilled pie crust. Sprinkle 1/3 of the cheese mixture over the top of the onions.

  Assemble half of the sliced tomatoes over the cheese mixture layer, overlapping the slices and then spread 1/3 of the cheese mixture over the tomatoes.

  Place another layer of tomatoes and then cheese mixture.

  Finally, assemble the rest of the sliced tomatoes over the cheese mixture layer.

  Pop pie into the oven to bake for 40-45 minutes.

  Fig and Caramelized Onion Galette

  A beautiful, hearty galette that will definitely impress everyone you serve it to! Tasty caramelized onion with chewy figs and topped with savory goat cheese, simply heavenly!

  Serves 4

  1 hour 30 minutes

  Ingredients:-

  2 Pie Crusts, chilled

  2½ cups Sweet Onions, cut into thin slices

  1¼ cups Figs, half cut into discs and half cut into quarters

  ¾ cup Goat Cheese, divided and softened

  1 Egg + 1 tablespoon Water, mixed together

  1 sprig fresh Thyme

  ¼ teaspoon Sea Salt

  1/8 teaspoon Sugar

  Directions:-

  Start by preparing the caramelized onions: heat up 1 tablespoon olive and 1 tablespoon butter in a large skillet. Add onions, salt and sugar and cook on low heat for 30 minutes, stirring every 5 minutes. Once onions have turned a golden brown color, take it off the heat.

  Roll out the pie crust dough into about 1/4-inch thick and into a 9 to 10-inch round.

  Put together the dough scraps and roll out another 9 to 10-inch round.

  Transfer both dough rounds onto a lined baking sheet and chill in the fridge for 20 minutes or more.

  Have the oven pre-heated to 400 degrees.

  Take the rolled out dough rounds from the fridge and spoon 3 tablespoons of goat cheese into the centre of the dough circle.

  Place half of the caramelized onions on top of the goat cheese.

  Assemble half of the fig discs along the edges of the filling and top with some thyme leaves.

  Fold the edges of the dough round over the filling, with the middle left exposed.

  Arrange half of the quartered figs onto the exposed part of the galette before covering with
a piece of clingwrap and place into the fridge to chill for at least 20 minutes.

  Repeat with the other dough round.

  When ready to bake the galettes, brush the tops of each generously with egg wash and bake for 30-35 minutes.

  1 hour 20 minutes

  Ingredients:-

  4 sheets Puff Pastry

  2 cups Feta Cheese, grated

  2 cups Ricotta

  1 Egg

  Directions:-

  Have the oven pre-heated to 375 degrees.

  Combine both types of cheese and egg in a mixing bowl.

  Roll out each sheet of puff pastry and spoon ¼ of the cheese mixture over the pastry sheet and roll each sheet up.

  Repeat with the remaining 3 sheets of puff pastry.

  Brush each pie generously with egg wash and poke 4-5 holes over the top.

  Pop into the oven to bake for 1 hour.
