4 free-range eggs, beaten
100g of Cheddar cheese, grated
150g of ricotta cheese

Directions:-
Preheat oven at 190C.
Place spinach in the colander; pour boiling water over it to wilt. Run it under the cold water and squeeze out the liquid as much as possible using hands.
Unroll pastry circle; transfer it to the lined baking sheet.
Beat eggs and ricotta till smooth and add wilted spinach, cheese, ham and thyme. Season it and pour it into center of tart case.
Fold up pastry’s edges over filling. Brush it with some milk and bake in bottom of oven for about 20 min or till set, slightly puffed up and pastry becomes golden.

1 bunch of spring onions, chopped
2 sticks of celery, chopped finely

Directions:-
Pre-heat the oven at 180°C. Lightly grease the muffin tin. Heat oil in a fry pan; gently fry vegetables for about 6-7mins, while stirring, till softened. Divide this mixture among 12 muffin-tin cups.
Mix together milk and eggs, and season it well. Pour it into all tins to cover vegetables. Sprinkle tops with the grated cheese.
Stand the muffin-tin on the baking tray; bake it in oven for 15 minutes till light golden and set. Cool it for 10 minutes before removing quiches. Serve them warm along with a crunchy salad or serve cold.

Sprinkle grated Emmental, chopped ham, chopped chives and asparagus on to pastry base.
