Bake the pie crust for 4-5 minutes. Cool completely, 20-30 minutes. (Tell them what happens if they don’t use the weight, Gertie. It bubbles the crust. And what about if the crust doesn’t cool? It’ll be too wet and be all mushy. Happy now? Yes, Gertie, I am. You’re all boss and no information. It’s a recipe, Maude. It’s supposed to be bossy. What’s it supposed to say? If you don’t mind, please gently put one lovely cup of sugar in the bowl? I don’t know, Gertie. The world might be mighty nice if everything gave instructions like that.)
Reheat the oven to 350°F.
Separate the eggs into white and yolks. (Have you tried the water-bottle method, Gertie? I saw a YouTube video on how to do it. Why would I watch YouTube to learn how to cook? To learn new things! Like using a water bottle to suck the yolk out of the whites? So you did see it! No. It was dumb. But it worked, right? Sure, if you’re no good at doing it the normal way. Oh, Gertie. You should be nicer.)
Beat the 4 egg whites on high speed with an electric mixer. They should form stiff peaks.
In another bowl, combine the 4 egg yolks, the sugar, and the melted butter. Whisk together until well blended.
Add the lemon juice to the egg yolk mixture.
Carefully fold in the egg whites. Do not overstir.
Pour the mixture into the piecrust bottom.
We recommend putting the pie on a cookie sheet, because you’ll pull it out halfway through, and it will still be jelly-like.
Bake the pie at 350°F for 10 minutes.
Remove the pie and begin poking blueberries into the surface. A crust may have begun to form, so you will have to poke the blueberries in. You don’t have to bury the blueberries. It’s okay if they stick out.
Cook the pie for 20 more minutes. It should be firm and not jiggle. If it’s jiggly, cook five more minutes. (What if it’s still jiggly after that, Gertie? Then you blew it. Eat it with a spoon.)
