  VEGAN TACO WITH CHICKPEAS AND CAULIFLOWER FILLING

  Another taco recipe will change your taste with another delectable filling. I told you that I have already exploring tacos all over the world through nets and some places visited during vacation leave. I became more curious about tacos, so I pick some recipes and made my own. Then it came to the point of invention and upgraded my very own recipes. This one is my sample. See ingredients and recipes below to have an extraordinary taco experience.

  INGREDIENTS:

  For the tacos:

  1/2 tablespoon serrano peppers

  1/2 cup red or orange lentils

  1/2 teaspoon cumin powder

  1/2 cup split yellow mung beans

  1 clove garlic

  1 cup water

  1 and 1/4 teaspoon salt

  For the chickpeas and cauliflower filling:

  1/2 teaspoon salt

  2 teaspoons oil

  1/2 teaspoon paprika

  1.5 cups cooked chickpeas

  1 teaspoon taco seasoning

  1 cup small cauliflower florets

  1/2 onion

  For the toppings:

  Avocado

  Fresh salsa

  Cashew sour cream

  PROCEDURE:

  For the tacos, wash mung beans and soak for 15 minutes up to 1 hour for a better. Drain mung beans.

  Combine drained mung beans and all tacos ingredients into the blender. Adjust in a high speed to puree the mixture. Add a cup of water to stir dry ingredients. Blend for 3 cycles to have a smoother batter mixture.

  Grease pan and heat. Pour a half of ladle into the pan. Spread to have a thin taco. Drizzle a little amount of oil at the edge of the pan. Cook for 5 minutes or until it turns in golden brown color. Don’t forget to flip both sides. Repeat same method with the remaining mixture

  For the chickpeas and cauliflower fillings, saute onion and cauliflower for 7 minutes or until it turns in golden brown color. Seasoned it with spices to coat and tastes good. Add water and salt and stirs well. Cook for another 7 minutes or until the cauliflower will have a crisp consistency.

  Place the fillings at the top of tacos. Spread with fresh salsa and cilantro. Add sour cream to drizzle. Add avocados of each tacos.

  You may now serve and enjoy this recipe. Have a great bond with your siblings then.

  VEGAN TACOS WITH SWEET POTATOES AND SMOKY LENTILS

  INGREDIENTS:

  2 teaspoon lime juice

  1/2 cup dry lentils

  Dash of black pepper

  1.5 cups of water

  3/4 teaspoon salt

  1 sweet potato, cooked and cubed

  1/2 teaspoon dry basil

  1 chopped onion

  1 teaspoon dry oregano

  1 tablespoon tomato paste

  1 teaspoon coriander powder

  1/2 teaspoon garlic powder

  1/2 teaspoon cumin powder

  1 teaspoon chili pepper

  1/2 teaspoon smoked paprika

  PROCEDURE:

  Saute all ingredients and seasoned with listed seasoning. Stir and let other ingredients smooth, sticky and ready to top.

  Arrange tacos in a serving plate then top with fillings, then spread the salsa all over the tacos and top each tacos with avocado.
