Ingredients:
1 teaspoon avocado oil
1 pound shrimp, shelled
A pinch of salt and black pepper
1 yellow onion, chopped
3 garlic cloves, minced
1 teaspoon red pepper flakes
15 ounces canned roasted tomatoes, chopped
1 tablespoon parsley, chopped
Directions:
Heat up a pan with the oil over medium-high heat, add garlic, onion and pepper flakes, stir, cook for 5 minutes and transfer to your Crockpot.
Add tomatoes, salt, pepper and parsley to the pot as well, cover and cook on Low for 2 hours.
Add shrimp, toss, cover and cook on High for 15 minutes.
Divide shrimp mix between plates and serve.
