2 cans tomato paste
1 can tomato sauce
3 – 5 cloves of garlic, pressed
2 T oregano
2 T parsley flakes
1/2 cup onion, finely chopped, or grated for more flavor
1 T basil, rosemary & onion salt, blended (or mixed Italian spices)
Steps
In large pot, blend red sauce, tomato sauce, tomato paste, garlic, onion and spices and slow cook over low-medium heat for 2 – 3 hours, stirring frequently, until flavors are blended (for this you MUST taste test!)
In another large pot, bring salted water to a boil...add lasagna noodles and cook only until the noodles are pliable (overcooking will cause them to tear when assembling the lasagna)
Prepare a large baking dish by lightly spraying sides and bottom with olive oil spray.
Assembly
Begin by spooning a layer of sauce over the bottom of the baking dish
Follow that by spreading a layer of the shredded cheese over the sauce.
Drain and cool the lasagna noodles, until you can handle them without burning your fingers.
Lay noodles over the cheese (you may need to cut some of the noodles to fit the dish)
Cover the noodles with a liberal layer of sauce, then cheese, then more noodles; ending with the final layers of sauce and cheese.
Bake at 350 degrees for 45 – 70 minutes (ovens vary) until the sauce is bubbly and the top layer of cheese begins to brown.
Serve with a crisp salad and toasted garlic bread.
Variation
Spread ricotta cheese over the noodles before adding the sauce and shredded cheese. This is a little more time-consuming, but it is good that way, too.
