  1 free-range egg

  50g Caster sugar, plus extra for dusting

  A pinch of salt

  65g Currants

  A pinch of mixed spice, or nutmeg

  A splash of milk, if needed

  Method:

  In a large bowl, mix the flour, spice and salt together.

  Using your fingers rub in the butter, until you have a breadcrumb consistency.

  Add in the sugar and currants and stir with a wooden spoon.

  In a separate bowl, beat the egg with a fork.

  Add the beaten egg to the dry ingredients and stir well, until you have a stiff dough that can be formed into a ball. If the mixture is too dry, add a splash of milk.

  Roll the dough out until is it about 1/2cm thick. Cut into rounds using a biscuit cutter.

  Grease a griddle or a heavy cast iron frying pan with some butter, wiping away the excess, then heat over a medium heat. Test that the griddle is hot enough by sprinkling a little water on it, if the water skips about and forms balls, it is ready.

  Place the Welsh cakes on the griddle and bake for about 3 minutes on each side. They should be golden brown and have risen slightly.

  Serve immediately, dusting with a little extra sugar.
