2. After the water returns to a boil, let the rice cook for two minutes and add the milk.

  3. Add the sugar after the milk boils.

  4. Dissolve the corn starch in a little bit of cold water and add it to the pot.

  5. Let it cook at a soft boil until the rice is tender.

  6. Remove from heat and temper in the egg yolks, mixing them in slowly and stirring constantly.

  7. Return to stove and cook on low heat, without boiling, for 3-4 minutes.

  8. Remove the lemon peels and cinnamon sticks.

  9. Pour onto individual bowls and decorate with ground cinnamon.

  Enjoy it warm, at room temperature, or cold from the refrigerator. Refrigerate any leftovers.
