Zest of 1 small Lemon
Salt/pepper to taste
1 12-ounce jar marinated artichokes, drained
8-ounce mini fresh mozzarella balls in water, drained
1-1/2 cups pitted and stuffed green olives (you can also mix in pitted kalamata olives), drained
chopped pistachios (optional)
Mix olive oil, vinegar, garlic, Italian seasoning, herbs, lemon zest, salt and pepper.
Toss artichokes, mozzarella and olives into oil mixture until evenly coated. Marinate 30 minutes before serving.
Sprinkle with chopped pistachios (optional)
Meg’s Easy Cheesecake Bars
2 packages refrigerated crescent rolls
2 packages (8 ounces each) cream cheese, room temperature
1 cup white sugar
1 tablespoon vanilla extract
1 stick (1/2 cup) butter, melted
3/4 cup cinnamon sugar
Preheat oven to 350 degrees. Grease a 13 x 9 baking pan with cooking spray.
Lay one roll of crescent rolls in a single layer on the bottom of the pan. Pinch together any seams, stretch to fit bottom of the pan.
In a bowl, use an electric mixer to beat the cream cheese, white sugar and vanilla until combined. Spread over first crescent layer.
Unroll the other crescent roll on a cutting board. Pinch seams and stretch so it is same size as pan. Carefully lay it over the top of the cheesecake filling. Pour the melted butter over the top, and evenly sprinkle cinnamon sugar on top.
Bake for 30 minutes. Let cool completely before chilling in the refrigerator. Cut bars and store covered in the refrigerator.
Claire’s Cranberry Pineapple Punch
4 cups pineapple juice
4 cups cranberry juice
2 liters ginger ale
Juice of 1 to 2 limes
(You can also add 2 cups of rum)
Garnish:
2 limes sliced
1 cup of fresh cranberries (frozen to keep the punch cold)
