When the display reads “Hot,” whisk the chocolate mixture together until it has completely melted and blended, approximately 5 minutes.

When the chocolate mixture is blended, press the Cancel button to turn off the sauté function. Fold in and blend the marshmallows in the chocolate mixture using a silicone spatula.

When the mixture is fully blended, add the walnut pieces and vanilla, and stir until the mixture is well combined.

Pour the fudge into an 8 × 8-inch (20 × 20 cm) square baking pan lined with parchment paper. Make sure the parchment paper overhangs the pan by a couple of inches to allow the fudge to be easily removed. Place the fudge in the refrigerator and let it cool for 4 hours.

Lift the fudge out of the pan using the parchment paper. Place the fudge on a cutting board and cut it into 36 pieces. Store it in an airtight container in the refrigerator or freezer.

  ACKNOWLEDGMENTS

This cookbook is a delicious work of art thanks to many dedicated people. First and foremost, thank-you to my wonderful husband who always has my back and was more than willing to clean my Instant Pot hundreds of times so I could get all the recipes in this book just right. To my entire family who enthusiastically devoured all of my holiday creations even in the midst of springtime. There’s nothing quite like turkey, sweet potatoes, and pumpkin pasta as spring gives way to summer! Thank you to the Instant Pot gang and community who continue to give me unwavering support. And a great big thank-you to Nicole Fisher and the entire team at Sterling Publishing whose attention to detail, flair for beauty, and sheer determination to put out the very best holiday cookbook on the shelves this season produced a book that far exceeded my expectations (and I’ve got high expectations!)
