Now. my dearies, let us philosophize. They will fall the second you remove them from the oven. All is not lost. Allow them to cool in the tin. In a glass baking dish—again with the nutso spraying of cooking spray. Place your little discs of corny soft billowyness. Pour 1/2 cup of heavy cream around them and warm in a 350-degree oven. Sprinkle with chives and experience bliss.
Apple Spice Wedding Cake:
This makes one 3 layer 10-inch cake
2 packages of high quality yellow cake mix
6 apples ideally something like Braeburn—you want something that won't turn to mush, peeled and grated.
6 egg yolks (keep your hair on—you’ll use the whites in the frosting)
1 cup of buttermilk
1 stick of butter
1 cup golden raisins
1 cup dried sweetened cranberries
1 cup chopped walnuts
Cinnamon, nutmeg and ginger to taste
Melt butter in a wide big skillet, pour in apples and their juice—if at all possible use a food processor for this. Allow the apples to brown a bit in the butter, the apples will shed a lot of juice. After the apples have a bit of color, toss in the craisins and raisins and set aside. In your mixer bowl, combine yolks, buttermilk, cake mix, 3 tsp of apple pie spice. Add the apple mixture and stir to combine. Douse your 10” cake pan with cooking spray with flour—I only have one 10-inch pan, so I do it in three batches. Bake at 350 degrees for about 25 minutes, set aside to cool on a rack.
Frosting:
In your mixer bowl combine 6 egg whites and 1 1/2 cups light brown sugar. Whisk together and place over a saucepan of simmering water. Whisk until all sugar is dissolved. Place in your mixer stand and let ‘er rip. When you have a tawny meringue, add 3 sticks of butter, cut into quarters. It will briefly appear curdled. Keep mixing, it will be worth it. Put frosting between each layer, apply a crumb coat and then frost with a swirly demeanor—for more specific directions, see recipe in my book Relish.
