Pour 1/3 of the white chocolate batter onto the crust. Drop one large spoonful of the dark chocolate batter at a time on top. Pour the remaining white chocolate batter over it. Using a knife, gently swirl the mixture.
Turn the oven up to 400 degrees and bake for 15 minutes. Reduce heat to 200 degrees and bake for 3 hours. Turn oven off and slightly open the oven door. Let cheesecake remain in oven for 1 hour. Remove from oven, cool completely, cover with plastic wrap, and chill in refrigerator for 24 hours.
When ready to serve remove springform pan sides. Serve and enjoy!
NOTE: I’ve made a lot of different cheesecake recipes over the years and this is absolutely the best!
TOM’S SHRIMP ALFREDO
Ingredients:
1 lb. linguine pasta
2 tbsp. unsalted butter
1 ½ lbs. raw shrimp, peeled and deveined with tails removed
Alfredo Sauce:
½ cup unsalted butter
½ cup heavy cream
½ cup Parmesan cheese, grated (Do it yourself or get the pre-grated in the refrigerator section of your supermarket.)
2 cloves garlic, minced
Salt and pepper to taste
Directions:
Bring a large pot of water to a boil. Add 2 tablespoons of salt. Add the linguine and cook according to package directions. Turn off heat, drain and return to pot.
Melt butter in a medium saucepan over medium heat. Add garlic and cook for 1 minute. Add cream and Parmesan cheese to saucepan and reduce heat to low, whisking occasionally.
While the sauce is simmering, start the shrimp. In a large skillet, melt 2 tbsp. butter over medium heat. Add shrimp and cook for 3 minutes per side until pink. Don’t overcook!
Add shrimp to the pasta and pour the sauce over it. Toss to combine and coat the pasta.
Plate and enjoy!
BAKED APPLES
Ingredients:
4 large baking apples
4 tbsp. butter, softened
½ cup brown sugar
¾ tsp. cinnamon
¼ cup chopped pecans
Directions:
Preheat oven to 375 degrees. Wash and core the apples, but leave enough of the apple to contain the filling.
Combine butter, brown sugar, cinnamon, and chopped pecans. Separate the mixture into four parts and fill each apple with one part.
Fill a baking dish with about ¾ cup water. Place the apples upright in the dish. Bake in oven for approximately 1 hour or until the apples are soft and the filling is browned. Cut in pieces, serve, and enjoy!
NOTE: We have two apple trees, so I’m always looking for ways to serve apples in the fall. This is great with pork.
