  Finally, as many other chefs have stated in many other places, the Internet is your best friend when it comes to finding ingredients. Wondering what a package of katsuobushi looks like? Consult the Goog. Need a fine-mesh strainer or a pasta roller? Ask Amazon. Can’t find the flour you’re looking for? Head to King Arthur Flour. Looking for a local source for fresh ramen noodles? Rip a fat Google on it.

  In many cases, it costs the same to order something online as it would to buy it in the store. Plus, websites sometimes have more stock than brick-and-mortars. I tend to turn to the following sites when I can’t find something locally here in New York, but there are certainly more out there.

  Mitsuwa

  Mitsuwa is a large chain market with outlets in Chicago, New Jersey, and California. Their website (www.mitsuwa.com) offers everything from fresh vegetables—mitsuba, Tokyo negi, nira, and daikon—to the whole spectrum of dried fish and seaweed.

  Marukai

  The Marukai e-store (www.marukaiestore.com) has a decent dried fish selection, as well as ramen from Sun Noodle, which is the company that is manufacturing noodles from my recipe for Ivan Ramen New York. (The Marukai site doesn’t sell Ivan Ramen noodles.) The ramen comes with a broth base, which you don’t have to use. The noodles are frozen fresh and make a great substitute if you’re too busy to make your own noodles. Look for Sun Noodle Nama Shoyu Ramen.

  H Mart

  H Mart (www.hmart.com) is a massive Korean supermarket chain with locations in many states. Online, they offer a good selection of dried squid, dried sardines and anchovies, and seaweed. The actual stores are solid one-stop shops for very reasonably priced meat, fish, and vegetables.

  Asian Food Grocer

  Along with plush dolls and origami paper, you can order any number of Japanese food products from Asian Food Grocer (www.asianfoodgrocer.com).
