“This? Dinner out in a lovely restaurant?” Sandy asked. She was being facetious, she knew, but she hadn’t expected such emotion from Tom and she was unsure how else to react.
“I’m in love with you, Sandy, that’s what scared me,” Tom said.
Sandy gulped and searched for the right words.
“It’s okay, I said I’d explain tonight, I didn’t say I’d put you on the spot and ask for anything from you. I love you, and I think you should know, even though it’s terrifying me to admit this. I’ve never felt like this before and I guess I had to hide for a bit and get my head around it. I’m sorry.”
Sandy reached across the table and took Tom’s hand in hers. “I love you too.”
“What?” He asked.
She nodded. “I realised this week, although Coral told me she knew before I did. She knows everything before I do.”
“Wow… does this mean…”
Sandy laughed at his nerves.
“Does this mean we’re a couple? I mean, I guess the question is, will you be my girlfriend? God, that sounds awful at my age.”
“Yes, I’ll be your girlfriend, Tom Nelson. Or your woman friend, however you want to describe it.” Sandy agreed.
Tom squeezed her hand and reached across the table, planting a delicate kiss on her lips.
“I’ve got something to ask you in return,” Sandy said on a whim.
Tom looked at her, his gaze curious now, nerves faded away.
“Do you fancy a trip to Scotland?”

Banana Cream Pie To Die For
Ingredients:
1 cup sugar
1/4 cup corn flour
1/2 teaspoon salt
3 cups skimmed milk
2 large eggs, beaten
3 tablespoons butter
1 1/2 teaspoons vanilla extract
1 pastry case (9 inches), baked
2 large firm bananas
1 cup whipped cream
1 teaspoon cinnamon
Method:
1. In a large saucepan, combine the sugar, corn flour, salt and milk and mix until smooth.
2. Cook and stir over a medium-heat until the mixture thickens and becomes bubbly.
3. Reduce heat; cook and stir for 2 more minutes.
4. Remove from heat. Stir a small amount of the hot filling into the eggs, then return all to the pan.
5. Return mixture to heat and bring to a gentle boil. Cook and stir for 2 more minutes.
6. Remove from heat. Gently stir in butter and vanilla. Transfer into a bowl and cover with cling film.
7. Place in fridge for 30 minutes.
8. Spread half of the custard mix into pastry case. Slice bananas and arrange over the filling.
9. Pour remaining custard mix over bananas. Spread with whipped cream. Dust cinnamon over whipped cream.
10. Refrigerate for 6 hours or overnight.
11. Enjoy!
