  Easy Lettuce Wraps

  Easy to make lettuce wraps perfect for Phase 1 of the South Beach Diet.

  Ingredients:

  4 large iceberg lettuce leaves

  4 slices roast turkey

  ½ cucumber, sliced into thin strips

  230 grams pre-made hummus

  1/8 teaspoon paprika

  Directions:

  Top a lettuce leaf with a slice of turkey, cucumber, hummus, and paprika. Roll it up tightly.

  Repeat with the remaining ingredients. Serve immediately.

  Bacon and Broccoli Salad

  A delicious low-calorie salad that incorporates bacon, jicama, and broccoli.

  Ingredients:

  950 grams cooked broccoli, coarsely chopped

  300 grams jicama, diced

  1 small red onion, minced

  6 slices cooked turkey bacon, finely chopped

  60 grams reduced-fat mayonnaise

  120 grams Greek yogurt

  3 cloves garlic, minced

  1 tablespoon apple cider vinegar

  1 teaspoon brown sugar

  A handful of dried or fresh cranberries

  Salt and black pepper to taste

  Directions:

  In a large bowl, whisk together garlic, mayonnaise, yogurt, vinegar, and sugar.

  Add the remaining ingredients. Toss to coat with the dressing.

  Ginger and Cilantro Tilapia

  A convenient last-minute meal that is loaded with flavor and is easy to prepare.

  Ingredients:

  1 lbs. tilapia fillets

  Salt and black pepper to taste

  3 cloves garlic, minced

  1 tablespoon ginger, grated

  1 jalapeño pepper, finely chopped

  80 grams cilantro, coarsely chopped

  60 grams white wine

  2 tablespoons tamari

  1 teaspoon sesame oil

  Finely chopped scallions and extra cilantro for garnish

  Directions:

  Heat oven to 475 degrees F.

  Pat the tilapia dry, season lightly with salt and pepper, and lay in a glass baking dish.

  Combine the garlic, grated ginger, jalapeño, cilantro, white wine, tamari, and sesame oil in a food processor. Process until well-blended.

  Pour the sauce over the fish, making sure to rub it in. Bake for 8-10 minutes, or until the fish is cooked through.

  Serve immediately over orzo or brown rice, garnished with the additional scallions and cilantro.

  Easy Mustard Chicken

  This dish is bursting with flavor. The best part is that it has a low glycemic index, making it an ideal meal for those following the South Beach Diet.

  Ingredients:

  For the chicken:

  4 boneless, skinless chicken breasts

  1 tablespoon olive oil

  ½ teaspoon poultry seasoning

  For the sauce:

  60 grams light mayonnaise

  60 grams light sour cream

  1 tablespoon Dijon mustard

  ½ teaspoon dry mustard

  ¼ teaspoon ground ginger

  180 grams chicken broth

  Directions:

  Trim all excess fat tendons from the chicken breasts. Make small slits crosswise down the length of each breast and season with poultry seasoning on both sides.

  In a large pan, heat olive oil. Pan-fry the chicken for about 4 minutes on each side. The chicken should be slightly golden-brown.

  While the chicken cooks, combine all the sauce ingredients in a bowl and whisk together.

  Pour the sauce over the chicken. Simmer for 20 minutes. Remove the chicken from the pan and whisk the sauce until smooth. Serve hot, with a little sauce spooned over each piece of chicken, garnishing with fresh parsley if desired.

  Quick Carne Asada

  A mouth-watering flank steak dish for meat-lovers. This is perfect for Phase 1 of the South Beach Diet.

  Ingredients:

  60 grams fresh lime juice

  2 cloves garlic, minced

  Salt and black pepper to taste

  1 ½ lbs. flank steak

  1 large red onion, sliced into thick rings

  ½ teaspoon extra virgin olive oil

  1 small avocado, diced

  240 grams fresh tomato salsa

  Directions:

  Marinate steak in a baking dish along with the lime juice, garlic, pepper, and salt. Cover and let it stand for 30 minutes, turning once.

  Heat lightly coated grill pan or grill with cooking spray. Grill steak for 5-7 minutes per side, basting with the marinade. Remove the steak from the heat, cover, and let it rest on a plate or cutting board for at least 10 minutes.

  Coat onion rings with olive oil. Grill onions for 5 minutes.

  Slice the steak against the grain into thin strips. Serve with avocado, onion, and salsa.

  Garlic Lover’s Beef Stew

  Here is a dish accompanied by a generous amount of fragrant garlic.

  Ingredients:

  2 ½ lbs. beef chuck roast, cubed

  1-2 tablespoons olive oil

  350 grams beef broth

  240 grams garlic cloves, sliced into lengthwise slivers

  240 grams Kalamata olives, cut in half lengthwise

  2 tablespoons capers

  3 bay leaves

  1 teaspoon dried oregano

  1 can diced tomatoes

  2 tablespoons tomato paste

  3 tablespoons red wine vinegar

  Black pepper to taste

  Directions:

  In a frying pan, heat the oil over medium-high heat. Brown the beef cubes. Put beef in the Crockpot. Add the beef broth to the frying pan, and scrape up any browned bits from the bottom of the pan. Simmer until the beef broth is reduced to roughly 3/4 cup. Add reduced broth to the Crockpot.

  While the beef is browning, add garlic and olives to the Crockpot along with capers, bay leaves, oregano, canned tomatoes, tomato paste, red wine vinegar, and pepper.

  Cook on high for about 4 hours or a little longer, until meat is tender and flavors are well blended. Serve hot.

  Swedish Meatballs

  Cooking healthy South Beach Diet recipes has never been so easy. Try these Swedish meatballs that are sure to blow your taste buds away.

  Ingredients:

  1 lb. lean ground beef

  1 lb. lean ground turkey

  1 yellow onion, minced

  1 tablespoon ground garlic

  ¼ teaspoon salt

  ¼ teaspoon white pepper

  ½ teaspoon ground ginger

  ½ teaspoon ground cardamom

  ½ teaspoon ground allspice

  ¼ teaspoon ground cinnamon

  Directions:

  Preheat oven to 400 degrees F.

  Combine meat, onions, garlic, salt, pepper, ginger, cardamom, allspice, and cinnamon.

  Spray a pan or a grilling rack with olive oil or non-stick spray.

  Use a spoon to measure out meat, forming small meatballs by rolling with your hands and placing them on the rack as you go. Bake until meatballs are slightly browned and cooked through, 20-30 minutes. Serve hot.

  South Beach Diet’s Mocha Ricotta Crème

  The best thing about eating healthy is rewarding yourself with a delicious dessert. This is a recipe from the South Beach Diet Cookbook. This dessert is sure to satisfy your sweet tooth and chocolate craving.

  Ingredients:

  120 grams ricotta cheese

  ½ teaspoon unsweetened cocoa powder

  ¼ teaspoon pure vanilla extract

  1 package sugar substitute

  1 dash espresso powder

  Mini chocolate chips

  Directions:

  In a bowl, mix together the ricotta, cocoa powder, vanilla extract and sugar substitute. Refrigerate until chilled.

  Just before serving, sprinkle chocolate chips and a dash of espresso powder over the top.

  Chocolate Peanut Butter Muffins

  You can indulge in th
ese muffins without feeling guilty. They are suitable for the South Beach Diet.

  Ingredients:

  2 eggs

  8 packets sugar substitute

  120 grams peanut butter

  120 grams cottage cheese

  1 teaspoon vanilla extract

  1 teaspoon baking soda

  1 tablespoon unsweetened cocoa powder

  Directions:

  Preheat oven to 300 degrees F. Line a muffin pan with paper cups.

  Microwave the peanut butter for 45 seconds to melt.

  In a bowl, mix all the ingredients together.

  Spoon the mixture into the muffin cups and bake for 15 minutes.

  1: The Happy Family

  The family is the first institution a person will ever see when he starts remembering things as a young child. It is here that he will first experience happiness and his first grief. As he grows up, he will understand how important the bond of family is, and what it requires to remain strong. Keeping a family happy isn’t only the responsibility of one or two persons; it is the responsibility of each member. Each parent has a role in keeping the family bonded and the children should also take part in keeping that bond.

  A happy family is not just described as a big house with each family members living inside. They may have all the riches in the world, they may be able to travel anywhere on the world map, and buy anything no matter how expensive it is. Sure this can make anyone in a family happy, but riches just cannot give you everything in life.

  A happy family, no matter the social status, has its members together for quality time. It doesn’t matter if there is only one child or 10 children, as long as they are happy together forgetting the problems momentarily and having a good time. Even if the kids have grown up and have their own families, a family will still be considered happy if they can once in a while come to their old house and stroll down memory lane when they were still little ones.

  Wealth doesn’t determine the happiness of the family. There are many stories about a man who had a lot of wealth but was unhappy because he is all alone in his mansion. He has a family, but they were all living away from him. On the other hand, there are families living together in a hut without many things at home except for just enough food, but one may see all members laughing most of the time. Being happy with your own family is all about emotion and love. No material item can replace them.

  As a person grows old, he creates a family of his own. He will be a parent whose responsibility is to keep each family member bonded. However, he/she should keep in mind of his/her role as a child in the previous family he/she had. Old people are more sensitive and as they spend the rest of their lives at home, they remember more of their younger years with their little ones. They at least spend a day each year together with everyone to keep each family member happy with stories and funny experiences of the past.

  2: Parenting - The first requirement of a happy family

  A family can be considered a happy one if all members have a strong bond between each other. In addition, proper parenting can only strengthen this bond. Since the parents are matured enough to know what’s right and wrong, it is then their responsibility to teach their children the value of family and kindness.

  While the kids are young, they will fight and they will always try to get ahead of each other. This is natural, but if parents do not educate their children about kindness and the value of goodwill, their children will grow up bearing grudges at each other that may lead to serious problems in the long run. This will obviously be a big obstacle to attaining a happy family. Envy and other factors will spark rivalries between siblings. Although this is common among most families, parents should still remind their children to keep their rivalries aside on serious matters. They may fight outside the house, but they should always watch each other’s back when they are outside.

  Some siblings have different personalities. For such reason they find it hard or even impossible to get along. They will not be able to fix their gaps at such a young age, and that is where the parents are much needed.

ten, the kids are the ones who make the family happy. For them to have a positive attitude towards life, they should be trained in an environment that is comfortable for them to be able to learn about good things and understand them. Proper parenting is important in almost all aspects of a child’s life until he/she reaches the age where he/she can form a new family.

  3: The Mother’s Role in a Happy Family

  In a happy family, each member has a unique role to play, but a mother’s role has always proved to be more special compared to others. Not just in a family, but in life itself, a mother’s role is very important in a happy family. Without her, a family would not be as lively and as organized as one with a mother in it. A solid family can support and develop all the members. A mother should keep this in mind as she nurtures her children as they grow up. Raising a daughter is a lot different than raising a son. A mother should always remember to:

  Protect the girls and trust the boys. Sons should be taught early to be more responsible because they will need it as they grow up and eventually have families of their own. Girls, on the other hand, should be protected because of their nature. Although they are also to be taught how to be responsible, girls are more fragile than boys, both physically and emotionally, and they may fall easily to temptation especially if they don’t have a happy and stable family.

  Give attention to the child before they even need it. Mothers are naturally intuitive and sensitive especially when it comes to their children’s needs. When parents share special times with their children, they will enjoy all of them in their own way. It is always fun to have quality time with the family.

  Give spiritual education and social opportunities that are appropriate to the children’s ages and abilities. It is often said that the parents, particularly the mother, is a child’s first teacher. It is only natural for a mother to teach her children the necessities of life, both physical and spiritual.
