1¼ cups boiling water
1 cup rolled oats (quick or old-fashioned, uncooked)
½ cup butter (softened)
1 cup sugar
1 cup brown sugar
1 teaspoon vanilla
2 eggs
1½ cups sifted flour
1 teaspoon soda
½ teaspoon salt
¾ Tablespoon cinnamon
¼ teaspoon nutmeg
Pour the boiling water over the oats. Cover and let stand 20 minutes.
Cream together the butter, sugar, brown sugar, vanilla, and eggs. Add the oats mixture and mix well.
Sift the dry ingredients together, and then add to the wet mixture. Beat all together until smooth before pouring the batter into greased and floured cake pans.
Bake at 350 degrees for 50 minutes or until a toothpick comes out clean.
Frosting
¼ cup melted butter
½ cup brown sugar
3 Tablespoons milk or cream
½ cup nuts, chopped
¾ cup shredded coconut
Mix all of the ingredients together and spread evenly over cake. Put under broiler for 2 minutes.
Sunbonnet Cake
1 cup butter
2 cups sugar
1 cup cornstarch
1 cup milk or water
2 cups flour
2 teaspoon baking powder
1 Tablespoon lemon rind, grated
4 egg whites, beaten
Cream together the butter and sugar. In a separate bowl, mix the cornstarch with the water or milk and then add to the butter-and-sugar mixture. Stir in the flour, baking powder, and grated lemon rind, and then fold in the beaten egg whites.
Pour into a greased and floured Bundt pan and bake at 350 degrees for 45-50 minutes or until a toothpick comes out clean.
