  A RECIPE FOR YOU!

  Banana Whip Cinnamon Cookie Sandwiches

  Yield: 6 cookie sandwiches

  Ingredients:

  3 bananas

  2 tbsp white sugar

  2 tsp ground cinnamon

  2/3 cup dark brown sugar

  1/3 cup white sugar

  2/3 cup butter, softened

  1 ¼ eggs

  1 tsp vanilla extract

  1 2/3 cups all-purpose flour

  ½ tsp baking soda

  pinch of salt

  Directions:

  1. Cut bananas into 1 inch pieces and freeze overnight.

  2. Preheat oven to 300 degrees F.

  3. Mix 2 tbsp white sugar and cinnamon in a bowl and set aside.

  4. In another bowl, mix the remainder of the white sugar and the brown sugar with the butter and blend until grainy.

  5. Add eggs and vanilla extract and whip until smooth and creamy.

  6. Whisk flour, baking soda and salt together in a separate bowl. Add to sugar mixture, mixing at low speed just long enough to combine.

  7. Roll dough into twelve 1-inch balls, then roll each ball into cinnamon-sugar to coat. Place cookies on ungreased cookie sheets and bake at 300 degrees F for 18 to 20 minutes. Remove from sheets and let cool on racks.

  8. Blend the frozen bananas in a food processor for about one minute until smooth.

  9. Spoon the smooth banana whip onto the back of one of the cookies. Take another cookie and gently press the mixture down to make a cookie sandwich.

  10. Repeat until you have six cookie sandwiches.

  11. Enjoy!
