Preheat the oven at 350°F.

  In a mixing bowl, whisk heavy cream and eggs for about 2 minutes till fluffy and light. Add onions, dill, parsley, pepper and salt. Fold in Colby cheese and spinach.

  Melt butter in a cast-iron skillet. Lower the heat to a medium, add egg mixture. Stir bottom of the skillet using wooden spoon and loosen the cooked egg. Remove the skillet from heat; place it in oven; bake it for about 45 minutes.

  Serve it warm topped with field greens, like mesclun or arugula greens. Or, top it with toasted pine-nuts and drizzle it with olive-oil.

  Low-Fat Pea And Salmon Quiche

  This is a creamy delicious dish and it is low fat as well.

  Ingredients:-

  210g can of red salmon, drained, bones and skin removed, flaked

  ½ cup of baby peas, frozen

  1 tbsp. of fresh dill, chopped

  1 tsp of lemon rind, finely grated

  4 green onions, sliced thinly

  4 sheets of Phyllo pastry

  4 eggs

  Rice-bran oil cooking spray

  2 tbsps. Of parmesan cheese, finely grated

  ¼ cup of low-fat milk

  Mixed salad leaves, for serving

  Directions:-

  Preheat the oven at 200°C. Lightly grease a tart pan.

  Place peas, salmon, onion, lemon rind and dill in a mixing bowl. Stir well to combine.

  Place 1 sheet Phyllo on flat surface. Spray it with oil. Repeat layering using remaining Phyllo and oil. Line the base and up sides of the prepared pan using Phyllo. Spoon the salmon mixture over it.

  Whisk eggs, parmesan and milk in bowl. Pour it over salmon. Roll up the edges of Phyllo. Bake it for about 35 minutes or till golden and set. Serve it with mixed salad leaves.

  Feta and Zucchini quiche

  These are excellent quiches and make a great meal.

  Cook Time: 50 minutes

  Ingredients:-

  2 sheets of ready-rolled short crust pastry, frozen and partially thawed

  1 zucchini, cut into strips

  4 eggs

  ¼ cup of pure cream

  60g of Greek feta-cheese, crumbled

  ¼ cup of parmesan cheese, finely grated

  2 cloves of garlic, crushed

  1 tbsp. of fresh chives, finely chopped

  ¼ tsp of dry chili flakes

  Directions:-

  Preheat the oven at 200°C. Place the baking dish in oven. Using pastry line the base and sides of tart pan. Prick the base with fork. Freeze it for about 15 minutes or till firm. Place the tin on the hot baking dish in oven. Bake it for about 10-15 minutes or till golden. Remove it from oven. Reduce the temperature to 180°C.

  Arrange feta and zucchini in the pastry case.

  Place eggs, cheese and cream in a jug. Whisk them to combine. Season it with pepper and salt. Add chives, chili and garlic. Pour it over the zucchini mixture. Bake it for about 35 minutes or till golden and set and serve.

  Ingredients:-

  ¾ cup of pastry mix

  ¾ cup of cheese, grated

  4 eggs, beaten lightly

  1 cup of milk

  1 tsp of butter, softened

  310g can of corn kernels, drained

  2 tbsps. Of basil, chopped

  1 barbecued chicken, skinned, meat shredded

  1 onion, chopped finely

  1 tomato, deseeded and diced

  1 tbsp. of flat-leaf parsley, chopped

  Directions:-

  Preheat the oven at 180°C. Lightly grease a quiche dish.

  Combine cheese, butter, pastry mix, milk and eggs in a mixing bowl. Stir well.

  Add onion, basil, corn, chicken, parsley, tomato, pepper and salt to the egg mixture. Mix them well. Pour it into the prepared quiche dish. Bake it in oven for about 40-45 minutes or till golden brown and firm. Serve it warm.

  Roasted Vegetable Quiche

  This meat-free delight is an excellent quiche recipe!

  Ingredients:-

  2 sheets of ready-rolled short crust pastry, frozen and partially thawed

  500g of butternut pumpkin, peeled and cubed

  1 red capsicum, sliced thickly

  1 red onion, cut into wedges

  Olive-oil cooking spray

  4 eggs

  ¼ cup of pure cream

  ¼ cup of parmesan cheese, finely grated

  1 tbsp. of fresh coriander, chopped

  Directions:-

  Preheat the oven at 200°C. Place the baking-tray in top shelf in oven. Line a separate baking-tray using a baking paper.

  Using pastry, line the base and up sides of a tart pan. Prick the base with fork. Freeze it for about 15 minutes or till firm.

  Place capsicum, pumpkin, and onion on the prepared tray. Spray it with oil. Season it with pepper and salt. Place in lower shelf in oven. Place the tart pan over hot baking-tray in the oven. Bake it for 10-15 minutes or till pastry becomes golden brown and vegetables become just tender. Remove vegetables and tart pan from oven. Reduce the oven temperature to 180°C.

  Place eggs, cheese and cream in a jug. Whisk well to combine. Season it with pepper and salt. Arrange the vegetables in the pastry case. Pour over the egg mix. Bake it for 35-40 minutes or till golden and set. Top it with coriander and serve.

  Ingredients:-

  2 sheets of Pampas low-Fat Puff Pastry

  1 tbsp. of olive oil

  2 carrots, grated

  2 zucchini, grated

  125g of button mushrooms, sliced

  2 green onions, thinly sliced

  5 eggs

  350g of broccoli, cut into florets

  ¾ cup of low-fat milk

  1¼ cups of low-fat cheese, grated

  Directions:-

  Preheat the oven at 200°C. Place the baking tray in oven.

  Line a quiche-pan using pastry. Trim it. Prick the base with fork. Place a baking paper sheet on pastry. Half-fill it with dry beans. Place the pan on hot tray. Bake it for about 10 minutes. Remove the beans. Bake it 10 more minutes.

  Heat the oil in non-stick fry pan on medium-high heat. Add the mushrooms. Cook for about 4 minutes. Add rest of vegetables. Cook for about 2 minutes and cool.

  Whisk milk and eggs. Season it with pepper and salt. Spread the vegetable mixture on pastry. Sprinkle it with cheese. Pour over the egg mixture.

  Reduce temperature of oven to 180°C. Return the quiche to the hot tray. Bake it for 30-35 minutes or till set. Let it stand for about 10 minutes before serving.

  Ingredients:-

  1 tbsp. of olive oil

  1 brown onion, chopped finely

  1 red capsicum, deseeded and diced finely

  3 eggs

  2 chorizo sausages, chopped roughly

  ½ cup of self-rising flour

  1½ cups of milk

  1 cup of tasty cheese, grated

  Directions:-

  Preheat the oven at 200°C. Grease a quiche dish.

  Heat the oil in non-stick fry pan on medium heat. Add onion, capsicum and sausage. Cook, while stirring frequently, for about 4-5 minutes or till tender. Remove it from heat. Keep aside for about 5 minutes for cooling.

  Whisk eggs, flour and milk in a mixing bowl till well combined. Add cheese and sausage mixture. Season it with pepper and salt.

  Pour the mixture in quiche dish. Bake it for 45-50 minutes or till set in center. Allow it to stand for about 10 minutes and serve.

  Ingredients:-

  1 pie crust, refrigerated, softened as per directions on box

  1 cup of milk or half-and-half

  ¼ tsp of salt

  ¼ tsp of pepper

  4 eggs, slightly beaten

  1 cup (4 oz.) of Cheddar or Swiss cheese, shredded

  1/4 cup of Parmesan cheese, grated

  8 slices bacon, crisply cooked, crumbled

  1 tbsp. of onion, chopped (if desired)

  Directions:-

  Preheat the oven at 350°F. Place the pie crust in a pie plate as per directions on box.

  In a bowl, combine eggs, half-and-half, pepper and salt; keep aside. Layer bacon, onion and cheeses in the crust-lined plate. Pour the egg mixture over the top.

  Bake it for 40-50 minutes or till a knife inserted in center withdraws cleanly. Let it stand for 5 minutes; cut it into wedges and serve.

  This delicious and simple recipe is perfect if you want to make something different. Full of soft potatoes and mouth-watering flavor of smoked salmon, this is a must-have recipe.

  Ingredients:-

  750g pkt. of new potatoes, cooked

  Salt and pepper, to taste

  4-6 spring onions, sliced

  2-3 tbsps. Of dill, freshly chopped

  200g pkt. of smoked salmon, shredded

  200ml carton of crème fraîche

  4 medium eggs

  18 x 28cm tray bake tin, lined with baking parchment

  Directions:-

  Set oven at 180°C.

  Slice potatoes; spread half of them over bottom of baking tin. Season them with salt and pepper. Arrange half of salmon on the top; sprinkle with half of onions and dill over. Top it with remaining potatoes, season with salt and pepper and scatter with remaining salmon, onions and dill over.

  Beat crème fraîche and eggs together and pour it over salmon mixture. Bake it for 45-50 minutes, or till center is set. Cover it with a baking parchment if top browns very quickly.

  Remove the quiche from the oven; leave it to cool for some minutes, before transferring it to wire rack. Serve it warm.

  Farmer's Quiche

  This quiche is prepared with ham, cheese and potato. It is an easy and tasty quiche recipe.

  Makes: 6 servings

  Bake: 1 hr. 15 min at 350°F and 14-18 min at 450°F

  Ingredients:-

  1(9-inch) prepared pie-crust, or 1 deep-dish pie-shell

  1 cup (about 6 oz.) of baked ham, chopped

  1 cup of Southern-style hash-brown potatoes, frozen

  1 cup (about ¼ lb.) of Swiss cheese, shredded

  ½ cup of scallions, chopped

  ¾ cup of sweet red-pepper, chopped

  ½ cup of heavy cream

  2 tbsps. Of grainy mustard

  3 eggs

  ½ tsp of salt

  ¼ tsp of black pepper

  Directions:-

  Heat the oven at 450 F. Prick bottom and sides of the pie-shell all over using a fork. Line it with foil; fill the foil with dry beans.

  Bake it in oven at 450 F for 9-11 minutes. Remove the foil along with weights. Bake for 5-7 more minutes. Remove it from oven; let it cool slightly. Lower the temperature of oven to 350 F.

  Gently toss cheese, ham, potatoes, scallions and sweet pepper together in the prepared pie-shell.

  Whisk heavy cream, eggs, mustard, pepper and salt together in a bowl. Pour it over the ham mixture in the pie-crust.

  Bake the quiche in oven at 350 F for 1 hour and 15 minutes or till knife inserted at center withdraws cleanly. Transfer it to a wire rack; let it cool for 10-15 minutes prior to serving.

  Ingredients:-

  Cooking spray

  3 ½ cups of hash-brown potatoes, frozen

  1 cup of onion, chopped

  1 clove of garlic, minced

  2 cups of zucchini, sliced thinly and quartered

  1 cup of oil-packed artichoke hearts, chopped and drained

  4 large eggs

  1 cup of sweet red-pepper, diced

  ½ cup of low-fat mozzarella cheese, shredded

  ½ tsp of each of dry oregano and basil, crushed

  ½ cup of skim milk

  2 cups of tomato sauce, warmed

  Salt and pepper, to taste (optional)

  Directions:-

  Preheat the oven at 425°F.

  Evenly coat a quiche plate using cooking spray, Spread the potatoes and cover bottom and up sides of the dish; lightly coat them with cooking spray. Bake it till potatoes become lightly brown and crisp, for about 30 minutes.

  In a skillet, melt butter; cook garlic and onion till tender, for about 3-4 minutes. Add zucchini, artichokes, and pepper and cook till crisp-tender; season it with pepper and salt, to taste.

  Beat eggs, cheese, milk, oregano, and basil together in a bowl; season with pepper and salt, to taste. Add vegetables; pour it into the potato shell.

  Reduce the heat to 375°F and bake till knife inserted at center withdraws cleanly, for about 45 minutes.

  Serve it with ½ cup of sauce over every serving.

  100ml of crème fraîche

  50g of Parmesan cheese, grated

  Directions:-

  Preheat oven at 190°C.

  Heat oil in the fry pan, add onion; cook for 5 minutes or till translucent and soft. Add grated courgette to pan for 5 more minutes, stirring regularly and add peas for last 5 minutes.

  Tip sautéed vegetables in a bowl; add eggs, parsley, and cream and crème fraîche.

  Pour this filling in pastry case; scatter with grated Parmesan.

  Bake in oven for about 40 minutes. Serve it sliced either cool or warm.
