Triple Chocolate Muffin Recipe
Ingredients:
3 ounces butter
6 ounces semisweet chocolate
3 cups all-purpose flour
1 tablespoon baking powder
3 tablespoons unsweetened cocoa powder
1 cup light brown sugar
2 teaspoons vanilla extract
1 1/2 cups milk
2 eggs
4 ounces milk chocolate cut into chunks
3 ounces white chocolate cut into chunks
Preparation:
Preheat oven to 350 degrees Fahrenheit.
Line a 12 hole muffin tin with paper liners.
Melt butter and semisweet chocolate.
Sift flour, baking powder and cocoa into a bowl. Add light brown sugar and mix the dry ingredients together.
In another bowl whisk vanilla extract, milk and eggs together. Add to the dry ingredients and fold until combined.
Mix in lukewarm melted chocolate and butter mixture.
Mix in white and milk chocolate chunks. Leaving some small pieces to decorate the top of the muffins.
Spoon mixture into muffin cups.
Sprinkle leftover chocolate chunks on the top of the batter.
Bake in the preheated oven for 18 minutes or until a skewer inserted into the middle of the muffins comes out clean.
Cool on a wire rack.
