  Preheat the oven to 350° and line a baking sheet with parchment paper. Place the dough on a cutting board and cut it into 1-inch squares. Transfer the squares to the prepared baking sheet and bake for 8 to 10 minutes or until the edges of the biscuits turn light brown. Transfer the biscuits to a wire rack and let cool.

  Make the dressing: In a mixing bowl, whisk the mayonnaise with the lemon juice, mustard, garlic, Worcestershire and Lula. Slowly whisk in the oil. Season to taste with salt and pepper and refrigerate until ready to use.

  Prepare a hot grill or heat a grill pan over high heat. Brush the romaine hearts with olive oil and season with salt and pepper. Grill the lettuce until lightly charred, about 2 minutes per side.

  Divide the lettuce among plates. Using a vegetable peeler, shave some of the Parmigiano-Reggiano on top. Sprinkle the lettuce with the cheese biscuits, drizzle with dressing to taste and serve.

  One of the world’s most renowned food photographers, Thomas Schauer has had a passion for capturing moments on film from an early age. Born in Austria in 1969, Thomas spent the first half of his life living and working in Austria. With a number of clients in the U.S., he now spends much of his time working out of his New York City studio while maintaining relationships with his European clientele. He has worked with Nespresso, Uncle Ben’s, Grand Marnier, BBDO, The New York Times, Henkel and Masterfoods. Chefs Daniel Boulud, David Bouley and José Andrés have all had Thomas work on various cookbook projects. In 2012, he was rewarded with the Gourmand World Cookbook Award for the “Best Cocktail and Drink Book Worldwide” for Cocktails.

  Jaime Gottlieb is a Portland, Oregon-based food and travel writer, brand copywriter and the principal of Mighty Specs, a written communications company. She received her Bachelor of Arts degree at one of the top creative writing programs in the United States. After several years as a journalist and copywriter, Jaime enrolled herself in the French Culinary Institute in New York City to further explore her passion for cooking and world cuisines. For 10 years, she has written for a number of notable brands across the food, spirits, entertainment and hospitality genres.
